This works for me only until I restart the OS, afterwards the head-phone profile is default again. If I manually restart pulseaudio and bluetooth then the bug goes away. Would be nice to not have to do this manual step

Finally, the solution helping me to enable HFP by default! A2DP bugged my professional life in videocalls for many years. :-) Naturally, I haven't touched the BT config to disable headset because I needed exactly the opposite.
