In addition to the fuel issue, one of the major reasons wok cooking is so widespread is believed to be that its extreamly portable. All you need is a wok, and a tripod to hold the wok. Which makes it perticuarly well suited to the nomadic steppe tribes. And thus has spread to pretty much everywhere they had a major influence over.
