2Less an issue of "good pork" as much the requirement that garbage fed to pigs has to be cooked, which was not always the case. 2Yes, that would be one of the things required for "good pork" to be safe to eat raw. I'm not entirely sure how you'd verify it though, I just know that it is possible to source such meat from somewhere. @MatthewWalton most professional pig farmers (nothing against small operations that keep a few on the side) will have very strict hygiene standards. It's in their best interest to keep their animals free from parasites and other pathogens.
