Jun 24, 2015 at 21:12 comment added goblinbox Anecdotally, I routinely leave (vegetarian) dishes out, not just for two hours but overnight, and have observed that they're always fine. Unless they've been exposed to human saliva, in which case they're furry in the morning, or it's the middle of summer and the house isn't cooled, my observations lead me to believe that a lot of dishes are fine sitting out to cool. (I developed this habit when I had a fussy and ancient fridge, which would labor whenever hot foods were placed in it.) I would never leave, say, fresh homemade mayonnaise out, but a pot of curried chickpeas? No problem.
