Unless they've been exposed to human saliva, in which case they're furry in the morning, or it's the middle of summer and the house isn't cooled, my observations lead me to believe that a lot of dishes are fine sitting out to cool. (I developed this habit when I had a fussy and ancient fridge, which would labor whenever hot foods were placed in it.) I would never leave, say, fresh homemade mayonnaise out, but a pot of curried chickpeas? No problem. | |
