Loaded Grilled Breakfast Kabobs

Breakfast on a stick? Yes, please! This Grilled Breakfast Kabobs recipe takes all the best parts about breakfast—the rich pork sausage, fatty bacon, fluffy potatoes, red onions, bell peppers—and cooks them on a skewer over charcoal. My signature Beef Rub provides a salt-and-pepper base with some onion and garlic to bring out the natural sweetness of the pork while adding a savory depth. In under an hour, you can make these Grilled Breakfast Kabobs right in your own backyard as a main or side to serve at your next morning gathering.

Ingredients for Loaded Grilled Breakfast Kabobs

This recipe is simple, but oh-so flavorful. You need just 7 common ingredients to bring these kabobs together. Here’s what you’ll want on hand so you can get started:

  • 1 pound pork breakfast sausage (cut into 1-inch pieces)
  • 8 slices bacon (thick-cut, cut into 2-inch pieces)
  • 1 pound baby red potatoes (cut in half)
  • 1 orange bell pepper (cut into 1-inch pieces)
  • 1 red onion (cut into 1-inch pieces)
  • 2 Tablespoons avocado oil
  • 1 Tablespoon Hey Grill Hey Beef Rub

If you don’t have any Beef Rub, you can pick up a bottle in the Hey Grill Hey Store.

What to Prep Ahead for Breakfast Kabobs

This breakfast kabobs recipe is about as easy as it gets, but there are a couple things to keep in mind ahead of time. This way, everything is ready when you want to start grilling.

The Skewers

If you are working with wooden skewers, make sure to soak them in water for 30 minutes before threading and cooking your food. This simple step will help you avoid your skewers burning up on the grill. I used metal skewers when threading my breakfast kabobs, but bamboo skewers will work as well. There’s really no difference in cooking between metal and wood skewers, so it just comes down to what you like (or have).

The Potatoes

The baby red potatoes take longer to cook than the rest of your kabob ingredients, so I recommend parboiling them first. Bring a small pot of salted water to a boil, then add the potatoes and cook for 8 to 10 minutes. You want the potatoes fork tender, but not falling apart. Remove the potatoes from the water and cool until you can cut them in half to thread onto the skewers.

How to Make Breakfast Kabobs

Outside of that little bit of prep work, these breakfast kabobs are a breeze to make. Follow these easy steps so you can create your own kabobs at home:

  1. Preheat the grill. Set up your grill for direct heat at around 375 to 400 degrees F. This means charcoals evenly spread across the bottom of your grill so everything cooks with even heat. I made my kabobs on my charcoal grill, but you can also make them on your pellet grill or gas grill.
  2. Parboil the potatoes. While your grill is heating up, parboil the baby potatoes for 8 to 10 minutes in a small pot of salted water. Let them cool so you can slice and thread them. If you’re using wooden skewers, now is the time to soak them.
  3. Thread the kabobs. Once you’ve got your potatoes parboiled, cooled, and cut in half, you’re ready to assemble the kabobs. Thread the sausage pieces, folded bacon, parboiled potatoes, orange bell peppers, and red onions onto your skewers. Alternate ingredients for variety and color, then brush the kabobs with avocado oil. Season everything generously with the Beef Rub, and you’re ready to grill!
  4. Grill the kabobs. Place the skewers directly on the grill grates, then close the lid and cook for about 15 to 20 minutes. Make sure to rotate the kabobs 3 to 4 times during cooking. You’re looking for the sausage to cook through fully, the bacon to crisp up, and the veggies to develop a nice char.
  5. Serve and enjoy. Remove your kabobs to a serving platter and serve alongside your favorite style of eggs with some shredded cheese, sour cream, and some hot sauce.

How Long to Grill Breakfast Kabobs

When your grill hits that 375 to 400 degrees F range, the kabobs will take 15 to 20 minutes to cook. Close the lid while cooking, but make sure to rotate the kabobs every 5 minutes or so. That way everything cooks evenly and develops some nice charring. Once the peppers and potatoes are fork tender, and the internal temperature of the pork reads 160 degrees F using a reliable meat thermometer, your kabobs are ready to pull. Give them a couple minutes to cool, then go to town!

Serving Suggestions

These breakfast kabobs have so much variety and flavor, the serving possibilities are endless. Our favorite way to enjoy these morning skewers is with a heaping scoop of steamy scrambled eggs and all the toppings. Shredded cheese, sour cream, and hot sauce are must-have additions. If you really want to elevate the flavor experience, try one of these smoked salsas:

Susie’s Breakfast Kabob Pro Tips

To help make sure you nail these breakfast kabobs, I’ve compiled a few key tips. Everything here is already covered in the post above, but it’s worth mentioning again:

  • Soak the skewers. If you’re working with wooden skewers, pop them in some cold water for 30 minutes before threading your food to avoid burning.
  • Parboil the potatoes. This step is critical if you want evenly-cooked kabobs. The potatoes take longer to cook. Do not skip this step!
  • Thread visually. As you thread your skewers, keep the look of the finished product in mind. Alternate ingredients for color and variety so you have something that looks as good as it tastes.
