    I have to admit that I am now a bit ashamed that I didn't get this simple solution. I was simply thinking too complicated and didn't think of one of the last steps in the chain: checking the default app for a .txt file. You see in the notepad title that it's a .txt file, so it's indeed very obvious which extension is used. In our case it's the "desired" behaviour that all .txt files open with Notepad++.
