I am a Canadian permanent residence intending to apply for a Schengen visa to visit a sibling in Norway. This form says one of the documents is "Documentation of leave from work or educational institution". But I don't know what that is. Typically, leave of absence process is just requesting that in HR portal of the company and the line manager accepts it. Do they want a screenshot of that?

3I think that in most places (and Canada would be part of those places), the approval of the leave of absence would be enough to satisfy the requirement for "Documentation of leave from work or educational institution". What the immigration authorities want to know is that you will leave their territory when you say you plan to.
This particular documentation is designed to demonstrate
- you currently have a job at home
- your employer knows you are taking leave (you are not walking out and have not been dismissed)
- your employer expects you to return to work after leave (so you have an incentive to return home)
Any document that covers these three points is helpful and the more direct it is in stating them the better.
Some company will issue a letter to confirm your job and leave approval in letter head for visa process. I got one with my starting date, position, salary and period of leave approved. Check with HR if they can issue such a letter. It is to ensure that you have a job and not quitting or getting fired, therefore risk of overstay.
If HR says no then the screenshot is better than nothing.
