7 months ago, whispers of an Indian artist headlining Wembley Stadium began. To say I was excited would be an understatement.
Project Vada Pav was born that day.
The most iconic Indian street food being served in the world's most famous stadium was the goal.
I told anyone and everyone about Vada Pav over the following few weeks but there's no way to describe the perfect food. The only way to convince people is through their stomachs, so I made 6 Vada Pavs and brought them to work in March.
There were nods of agreement and the big question: can we scale this up for a large stadium production?
Then came the announcement!
Diljit Dosanjh would officially be the first Punjabi artist to headline Wembley Stadium.
Suddenly, Project Vada Pav wasn't just an idea. It became a very real challenge.
Over the following months, our amazing concessions team and chefs held countless conversations, tastings, supplier meetings, recipe testing and a lot of problem solving went into answering one question:
How do we introduce one of India's most loved street foods to tens of thousands of people in a stadium setting without losing what makes it special?
I can proudly say the challenge was conquered and Delaware North UK delivered a world class product.
Seeing thousands of fans celebrating Indian music, culture, and food in Wembley Stadium felt like something much bigger than a menu item. It felt like representation. It felt like pride. It felt like a moment.
From a homemade batch of six Vada Pavs made in my tiny kitchen to serving them at Wembley Stadium, the journey has been surreal.
Sometimes the smallest ideas start with a simple conversation, and end up becoming part of history.
