    I love this book. Non judgemental but practical on how to make small changes on becoming more mindful about what we eat. She writes from the heart about her journey as a cook and her influences from her French upbringing and her increasing realisation about the impact of food production on the environment. That said, the recipes themselves are stunning, this is someone who clearly loves good food! I’ve followed her on Instagram for a while so I know that her recipies are well written, practical and delicious. I’ve already made the bean chili with a cornbread topping from this book and it is delicious. I like that she suggests ways to make recipies vegan / vegetarian and the desserts in particular give so many great options for vegans. At its heart this is a book for people who want to cook healthy and delicious food for family and friends whilst being mindful of the world we live in.

    This is a cookbook with a difference. It tells a story of one woman's journey from traditional French cuisine to vegan recipes and everything in between. There is something about Annabelle Randles' story that makes you want to read her book, try her recipes, invite her round to dinner. Bravo!!!

    This creative cookbook is perfect for banishing winter blues with its vibrant colours and flavours. It deserves the name "Peace in the Kitchen" for its ability to bring harmony to the table, catering to a diverse range of tastes and preferences without passing judgment. It demonstrates a common-sense approach and an appreciation for individual dietary needs, supported by thorough research. Not to mention, the accompanying photos are simply stunning. My favourite dish is definitely the spring soccas with minty pesto.

    Although this book targets mostly those who are starting on a plant-based journey or want to increase their intake of plant-based food, it is also of great help for flexitarians like me who can create wonder with good plants without a recipe but fail to get the protein daily dose, the balance needed to sustain my intense sportive habits of 10 hours + a week. I remember having the same wake-up call discovering the author’s blog Flexitarian. Next shopping trip will have to be with the cookbook for sure.

    I recently discovered the "Less meat, more plants" by Annabelle Randles, and it's been a game-changer for my family's meals. The author's personal journey, from traditional French cuisine to flexitarian recipes, adds a relatable touch. We've already tried the Pan-fried Gnocchi with Eggplant Puttanesca – a hit even with meat-eaters! The cookbook's adaptability shines through in dishes like Roasted Cauliflower with Pearl Couscous, which we customized to our tastes. The beautiful photos and user-friendly design make it a go-to mealtime favourite. Highly recommend for those looking to enjoy a variety of flavours while being mindful of their dietary choices and the environment.

    I love this cookbook! We were recommended this wonderful book by a friend who thought its hybrid, flexitarian recipes would appeal to our family’s mixed eating – I am vegetarian, my family are not. We were all (even the teenager of the family) delighted with the meals it produced.
    Recipes were easy to follow and all very sound. When we hadn’t the precise ingredients, dishes were consistently adaptable, all relatively quick and perfect for our busy life. Those we tried were without exception delicious – some are already favourites, in particular, the Pan-fried Gnocchi with Eggplant Puttanesca, (gnocchi cooked to perfection!) the One-pot Orzo primavera (a great quick alternative to the traditional risotto). The Roasted cauliflower with pearl couscous, we all said was to die for! We loved the variety (far broader than typical Mediterranean and more interesting than healthy eating cookery books) and the ease of preparation. The appeal for ourselves was being able to widen our vegetable intake without having to think about it. It has helped to reduce the planning time which is so often an obstacle to healthier eating.

    As someone who collects recipe books, I love the aesthetic – beautiful pictures but matter-fact-of fact which reminded me of some of my longstanding favourite cookery books. For those who are interested in the research behind the book, it also makes fascinating reading and the breadth of information is of value to beginners and experienced cooks alike. I am so impressed, I have ordered one as a gift for a family member and will be ordering more for Christmas!

    As an almost vegetarian who can’t quite commit, I’ve liked the flexitarian approach since coming across Annabelle’s blog. I was looking forward to this recipe book arriving. I’ve already highlighted 20 recipes to start me off! I liked hearing about the author’s personal journey as it made me reflect on my own route. With a family who keep flexing (both children have been vegetarian at different points and I rarely eat meat) it was a great idea to have the recipes that could be modified to provide a meat and veggie/vegan option or both. There are a few ingredients I don’t have - they do largely seem to be store cupboard ingredients so will keep for ages once bought. I liked the photo recipe index at the back as a quick way to see what to make and that every recipe had a beautiful photograph of the dish (hate it when you can’t see what it should look like!). I’m very happy with the book and I’m looking forward to making lots of the options.
