Another state just got added to the craft beer map. The Brass Tap, the award-winning upscale American tavern franchise with more than 50 locations nationwide, has signed a franchise agreement to open its first-ever Delaware location in Middletown — a signal of continued momentum for the neighborhood-focused tavern concept and a textbook case of a new operator crossing over from corporate life into hospitality ownership.
The planned restaurant, led by franchisee Ashil Patel, is slated for Bayberry Town Center at 235 Town Center Drive, pending completion of lease negotiations. When it opens, it will bring The Brass Tap's signature craft beer selection, specialty cocktails, premium wines, chef-inspired menu and entertainment experience to the growing northern Delaware community.
From Corporate Pharma to Craft Beer Entrepreneur
Patel's path to franchise ownership is one more operators will recognize. After nearly three years in the corporate pharmaceutical industry — and a Doctor of Pharmacy degree in hand — he's making the jump into restaurant ownership.
"I come from a family of hard workers, pharmacists and business owners, and I've always been inspired by my father, who took a risk, left his corporate job and moved to Delaware to build a business of his own," Patel said. "Even though I earned my Doctor of Pharmacy degree and worked in corporate pharma, I knew I wanted to pursue something entrepreneurial. The Brass Tap gives me the opportunity to build a family-owned gathering spot for the Middletown community with good food, good drinks and good vibes."
Patel decided to join the brand after visiting a close family friend who owns a location in Marietta, Georgia, and speaking with several other franchisees across the country. His takeaway? The value of a built-in support system when you're new to the space.
"The Brass Tap offered the security and platform of a corporate team guiding us every step of the way, which was critical since we didn't have prior experience in the bar space," Patel said.
Currently based in Pennsylvania, Patel plans to relocate to Middletown and is especially focused on building a welcoming culture for guests and staff alike.
"You have to treat your bartenders, servers and kitchen crew like family and equals, because without them working alongside you, the doors simply don't open," Patel said. "I want to create a place where our staff feels supported and where every customer receives full value for their hard-earned money. Whether it's a family night, a football watch party or a local community event, I want people to know they can come to The Brass Tap and have a great experience."
A New Market for a Multi-Brand Franchisor
The planned Middletown restaurant will feature The Brass Tap's extensive selection of local and regional craft beers, specialty cocktails and premium wines, alongside its chef-inspired, upscale shareables menu. The brand rounds out the experience with live music, trivia, sports viewing, exclusive beer tastings and tap takeovers.
The Brass Tap is part of FSC Franchise Co., the Tampa-based multi-brand franchisor whose portfolio also includes Beef 'O' Brady's and Newk's Eatery — more than 250 locations across three concepts.
"The Brass Tap is built around creating places where people can come together, and Ashil's vision for Middletown aligns perfectly with that mission," said Chris Elliott, CEO of FSC Franchise Co. "His passion for hospitality, commitment to the local community and entrepreneurial drive make him a strong partner as we introduce The Brass Tap to Delaware. We're excited to support him as he brings our craft beer, dining and entertainment experience to a new market."
The Middletown location is currently in the lease negotiation stage, with an opening timeline to be announced as development progresses.
Why It Matters
Entering a brand-new state is more than a ribbon-cutting — it's a growth signal, and this deal highlights trends that operators and prospective franchisees should be watching:
- Career-changers are fueling franchise growth. Patel's move from corporate pharma into hospitality mirrors a broader pipeline of professionals bringing capital and business discipline into restaurant ownership. For franchisors, the lesson is clear: a strong support platform is the deciding factor for first-time operators without bar or restaurant experience.
- The upscale tavern niche still has runway. A concept pairing local and regional craft beer, cocktails and chef-driven shareables with built-in entertainment — trivia, sports, live music, tap takeovers — gives operators multiple revenue occasions and a community anchor, not just a bar.
- Multi-brand ecosystems de-risk expansion. Backing from a franchisor with 250-plus units across three concepts gives new owners proven playbooks for real estate, operations and buildout — a competitive edge in markets where independent operators often go it alone.
For procurement directors, beverage buyers and local craft breweries in northern Delaware, a new Brass Tap also means a fresh account that leans heavily on local and regional pours — worth a conversation as the project advances.
The Takeaway
The Brass Tap's Delaware debut underscores how community-focused, entertainment-driven taverns continue to attract entrepreneurs seeking a differentiated concept with corporate backing. As FSC Franchise Co. scales its portfolio, Middletown becomes the latest proof point that neighborhood gathering spots remain a durable bet in the f&b and hospitality space.
