SIMPLi is a leading regenerative food brand on a mission to connect people around the world through the joy of food. Founded in 2020, SIMPLi co-founders Sarela Herrada and Matt Cohen sought to bring the best single-origin ingredients from around the world directly to you in a way that equally benefits people, producers, and the planet. SIMPLi partners directly with farmers to source the finest ingredients and make them accessible to consumers nationwide in stores, restaurants, and online.

    We throw around the phrase "better for you" a lot. But what does it actually mean? For our co-founder Sarela Herrada, the answer goes deeper than a label. SIMPLi was built on the belief that real nourishment starts in the soil and runs through every farmer we partner with. Becoming a mother of three only sharpened that conviction.     TikTok creators finally got wise to generate buzz around #BeanTok, kickstarting a necessary appreciation for a long-misunderstood legume. Between the viral "Dense Bean Salad" trend and a new focus on nutrient density, the humble bean is finally getting its due. Our co-founder Sarela Herrada recently sat down with MarthaStewart.com to discuss the "renaissance" of this pantry hero. "From a culinary perspective, dried beans offer the most control over texture and flavor development," Sarela explains. "When soaked and cooked gently, they develop a deeper flavor and creamier interior."     𝐑𝐞𝐠𝐞𝐧𝐞𝐫𝐚𝐭𝐢𝐯𝐞 𝐀𝐠𝐫𝐢𝐜𝐮𝐥𝐭𝐮𝐫𝐞 𝐢𝐧 𝐭𝐡𝐞 𝐏𝐞𝐫𝐮𝐯𝐢𝐚𝐧 𝐇𝐢𝐠𝐡𝐥𝐚𝐧𝐝𝐬 🌄 Regenerative agriculture is a concept that has been consolidating in recent years, drawing from both modern science and ancient agroecological practices. In the Peruvian highlands, it is fascinating to validate how practices that are currently gaining global relevance have been the pillar of traditional farming knowledge for over 50 years in managing pest cycles and soil conservation. 🧑🌾 Today, I'd like to share two significant aspects found in the Peruvian highlands: 🌱 𝐿𝑢𝑝𝑖𝑛𝑖 𝑎𝑠 𝑎 𝑠𝑡𝑟𝑎𝑡𝑒𝑔𝑖𝑐 𝑎𝑥𝑖𝑠: Beyond its high nutritional density, it is also fundamental in crop rotation within regenerative production systems. This crop adapts remarkably well to minimum and zero tillage, competes effectively against weeds, and contributes through nitrogen fixation. 🌼 𝐶𝑜𝑣𝑒𝑟 𝑐𝑟𝑜𝑝𝑠 𝑤𝑖𝑡ℎ 𝑏𝑖𝑜𝑙𝑜𝑔𝑖𝑐𝑎𝑙 𝑝𝑢𝑟𝑝𝑜𝑠𝑒𝑠: In several areas of the Peruvian highlands, plots are left to fallow, and cover crops are maintained for planting; in these cases, it is not merely a matter of ground cover, but of functionality. In the Peruvian highlands, we can find cover crops with diverse species such as: wild radish, acting as a biological plow and as a refuge plant for bees and syrphids; wild anise, assisting in the natural control of nematodes; and white clover, ensuring the biological fixation of nitrogen.     Expo West 2026 recap 🫘🌱 What a week. From packed panels to bean salads and brand new mascots, Expo West was one for the books. ✨ Our Bean Queen, Violet Witchel, was at the booth serving her famous dense bean salad with our Regenerative Organic Certified® Gigante Beans, Black Beans, and Avocado Oil. 🎤 Co-founders Matthew Cohen & Sarela Herrada hit multiple stages sharing SIMPLi’s mission, regenerative organic practices, the Year of the Female Farmer, and what it means to build a food system rooted in integrity. 🫘 We debuted our adorable mascots Chickie the Chickpea & Gigi the Gigante Bean! 🧢 Our Spill the Beans merch was flying off the shelves. From hats and shirts to bandanas illustrated with the plants our ingredients come from, every piece tells the story of where our food (and our values) begin. And one thing was clear across the entire show: regenerative is the future.
