Cory Garrison reposted thisSiNaCa Studios has been trailblazing a difficult path in our community for 14 years, and has been an anchoring visual arts organization in the #nearsouthsidearts cultural district. Please consider supporting the only nonprofit glass arts organization in the region dedicated to all artists with a donation today. This organization deserves your support! For those of you that know me and SiNaCa Studios, I ask that you please share this call to action far and wide. This effort is critical.Cory Garrison reposted thisRevive SiNaCa Studios – We Need Your Help Today! Today, we face an acute funding shortfall. The challenges brought on by the global pandemic, inflation, and economic volatility have severely impacted the arts sector. Our beloved studio is at risk, and we urgently need to raise $75,000 this summer to revive the organization and continue our mission. We cannot do this without you. Your immediate donation is crucial to our continued operation and will directly impact our ability to: - Provide Studio Access - Maintain and Upgrade Equipment - Support Artists You can make a donation and learn more here: https://gofund.me/957c578b We want to extend a huge "Thank you!" to Warren and Make Something Beautiful for their efforts on helping us create this message.

Cory Garrison liked thisCory Garrison liked thisCooking for 5,000 on a bandsaw: The lessons you can't learn on the internet. Most people think their culinary training begins in culinary school. Chef Chad Welch’s training began with a paperwork error that landed him in a Navy galley, scaling recipes for 5,000 sailors aboard the USS America. In this episode of Chef’s PSA, we trace Chad’s path from an "accidental" Navy cook to Executive Chef at The Urban Stillhouse. This isn't a conversation about "hacks." It’s an argument for why your foundations matter. Before Google, before recipe databases, and before the convenience-product era took over, cooks learned through memorization, mentorship, and survival—literally. We discuss: The Scale Problem: How military systems built an operational baseline that most culinary schools fail to teach. The Death of Scratch: Why the shift toward convenience products is costing the industry its fundamental skills. The "Pre-Google" Discipline: Why you need to stop relying on search engines and start building your own culinary retention. Classic vs. Molecular: Technique without a foundation is just performance art. If you came up in this industry before smartphones, this episode will resonate. If you came up after, this is the training manual you didn't know you were missing. 🎧 Watch the full episode with Chad Welch link in comments! #ChefsPSA #ChefLife #CulinaryFundamentals #NavyChef #KitchenLeadership #RestaurantIndustry

Cory Garrison liked thisCory Garrison liked thisThe energy, the creativity, the competition! Here is a recap of the 10th Annual Fish to Fork Main Event 🐟 🍴 The evening began with attendees tasting individual dishes from each competing chef - an incredible showcase of talent and technique. Then, the excitement builds as chefs take the stage. Teams are randomly selected, and the pressure is on as a secret ingredient is revealed - this year, Caribbean root vegetables. With just 60 minutes on the clock, each team cooks live and plates their dishes for 450 guests, turning Magnolia Terrace and Lawn into a high-energy culinary arena. The power then shifts to the crowd, as attendees cast their votes to crown their favorite chef and team. This year’s celebration was further elevated by a vibrant theme of Latin and Caribbean flavors, brought to life through immersive Omni food stations across the lawn, each one thoughtfully curated to complement the competition and transport guests through bold, dynamic cuisine. We are grateful to the featured chefs who took time away from their restaurants to join us, event partners, and teams behind the scenes who made this milestone year truly exceptional. Here’s to 10 years of Fish to Fork and raising the bar even higher. ⭐ Chef’s Choice Winner: Kevin Tien (chefs voted for their favorite dish during a pre-event tasting) ⭐ Individual Chef Winner: Kathleen Blake (attendees' vote) ⭐ Team Challenge Winners: (Blue Team) Omar Collazo, Samuel-Drake Jones, Cesar Zapata, and Kevin Tien (attendees' vote) Theo S. Cory Garrison liked thisCory Garrison liked thisSomething I have seen repeat itself throughout my career. A sous chef gets promoted. They are the best cook on the line. They know the menu and food. And within six months they are gone... Not because they could not cook. Because they still thought like a line cook. They protected friendships instead of enforcing standards. They managed spreadsheets instead of managing behavior. They reacted instead of anticipated. The Sous Chef Blueprint addresses this directly. The operational guide for what the job actually requires. Ripples in Motion Chef Placement

Chefs: Busy Season is Approaching This is the time of year when the demand for private chefs surges. Holiday parties, long term placements, and one off events are already filling our inbox. For chefs, this means more opportunities to showcase your craft, expand your client base, and step into exciting new roles. To make sure nothing gets overlooked, here is how to stay connected with us: • Always apply or check in through the email listed in the job posting. That way, we can quickly match your résumé and details with open opportunities. • Social comments such as “I'm interested” rarely make it onto our radar. They do not give us what we need to move you forward. • Texts and DMs may feel convenient, but they get lost easily. Email keeps the process professional and organized. • If you do not hear back within 48 to 72 hours, one follow up email is welcome. Our goal is to keep you front and center for the right placements. The chefs who stay proactive, communicate clearly, and use email as their main channel will be the ones we can put forward the fastest. This season is your chance to secure exciting opportunities. Let us make sure your name is the one we can find at the top of our inbox. #PrivateChef #ChefNetwork #RipplesInMotion #ChefPlacements #BusySeason

💡 Staffing & Retention: The Silent Profit Leak in Restaurants Staffing challenges aren’t just an HR issue—they’re a financial one. When turnover is high or key roles go unfilled, the effects show up on your P&L: -Overtime and burnout drive labor costs higher. -Training new staff slows service and increases errors. -Morale dips, leading to inconsistent guest experiences and even more turnover. -Managers spend valuable time hiring and training instead of improving operations. For many independent restaurants, the true cost of retention issues isn’t always obvious until profits start to slip. Beyond pay raises and bonuses, there are other powerful ways to keep great people: mentorship, clear communication, recognition, and flexibility all go a long way in building loyalty. 👉 What are your top ways to retain good staff—besides money? 💬 And is there anyone you follow on LinkedIn for great ideas on retention or leadership? #RestaurantOwners #IndependentRestaurants #HospitalityIndustry #StaffingAndRetention #RestaurantProfitability #RASforRestaurants

New Zealand in North America

A Michelin-recommended restaurant in Dallas is putting Kiwi quality front and center. 🍽️ At Quarter Acre, chef Toby Archibald pairs New Zealand ingredients like Lewis Road Creamery butter with outstanding technique, creating a dining experience that feels distinctive in a highly competitive U.S. market. Beyond the food, the bigger lesson for Kiwi companies is cultural: in North America, excellence needs articulation — quality opens the door, but strong storytelling is what earns attention and trust. It’s a reminder that entering the U.S. market often means learning to say your value out loud and often, without losing authenticity. 📖 Read the full piece by New Zealand Trade and Enterprise Regional Director for North America, Mike "MOD" O'Donnell 👉 https://bit.ly/3MVLVoo

Multi-site menu chaos is not a chef problem. It is a systems problem. The same team can execute the same menu across the same kitchen model and still get different results. Local edits multiply. Recipe versions drift. Allergen updates lag. Production sheets go stale. Galley is the Culinary Resource Planning platform that turns menus and recipes into live operating records across every location. One menu should not create ten versions of the truth.

Boosting daily restaurant sales doesn’t always require a new menu or kitchen overhaul. It often comes down to smarter menu placement, strategic add-ons, and confident guest guidance at the right moment. Featuring one high-margin item per shift, positioning add-ons where guests naturally look, and training servers to make one clear recommendation can significantly lift average check size. At TapAndTable, we help restaurants align menu engineering, staff execution, and digital ordering systems to drive consistent, operationally realistic revenue growth. When your importer, wine agent, staff trainer, and menu designer are four different people, no one owns the result. You end up with: Wines that don’t fit the food. Staff that can’t tell the story. Menus that miss profit targets. A “program” that looks good on paper but falls apart in service. It’s not your team’s fault. It’s the disconnect. Wine only drives profit when everything speaks the same language: product, placement, pricing, and people. When one person owns that ecosystem end-to-end, everything clicks. Margins rise. Staff relax. Guests notice. A full-service wine agency takes care of all the details, freeing up time, increasing profits and one less thing to manage. #garyveestanchallenge
