Our next feature for our Women-Crafted Lot comes from Silvia Nishikawa, who leads Fazenda TRIS in São Gotardo, within the Cerrado Mineiro region. Her farm reflects a Japanese-Brazilian agricultural heritage, shaped by a community of farmers dedicated to precision. Fazenda TRIS emphasizes discipline which can be seen through their meticulous farm management, controlled post-harvest execution and a clear focus on specialty-grade production.
For this specific lot, Silvia uses the anaerobic fermentation process to highlight this coffee’s Arara varietal, an increasingly celebrated Brazilian cultivar. By carefully controlling the fermentation environment she is able to intensify this coffee’s aromatic complexity while preserving its clarity. She successfully accentuates its floral and tea-like qualities while adding an incredibly smooth and creamy mouthfeel.
