For the Steak:
• 2 to 2 ½ pounds skirt steak
• 2 ½ teaspoons salt
• 1 tablespoon Worcestershire sauce
• 6 garlic cloves
• ½ yellow onion, peeled, small diced

• Juice of 3 limes, about 5 to 6 tablespoons

• ¼ cup minced fresh cilantro

• 1 peeled, finely minced yellow onion
• 4 finely grated or minced cloves of garlic
• ½ teaspoons anchovy paste
• 1 ½ cups beef stock
• 1 teaspoon Worcestershire sauce
• ½ teaspoon blackstrap molasses
• ½ cup unsalted butter
• 1 Parmigiano cheese rind
• 6 to 7 pepperoncini with ¼ cup of brine
• 1 teaspoon of white or champagne vinegar
• 1 teaspoon of soy sauce
• ½ teaspoon dry dill
• 1 to 1 ½ teaspoons freshly squeezed lemon juice
• salt and pepper to taste
