Green mango salad and lemongrass chicken are two Vietnamese classics that belong in your regular rotation. The salad takes about five minutes. The chicken needs a good marinade, a hot grill or pan and enough restraint to let the edges get properly dark and sticky.

   <media:description>The recipe is almost laughably simple. Spaghetti, zucchini, basil, olive oil, black pepper, cheese. That’s it.

But as we all know, that is never really the whole truth.

The zucchini is sliced thin and fried, then left alone to cool. That resting period matters. The slices deepen in flavor and lose any moisture they may have had left. Tossed with hot pasta and a little cooking water, they begin to collapse into a sauce that feels impossibly rich for something built almost entirely from such a humble vegetable.

Watching Stanley Tucci eat Pasta alla Nerano on Searching for Italy did more for the dish than decades of cookbooks ever could have imagined. He called it his favorite pasta and suddenly cooks everywhere wanted to know what they’d been missing. Restaurants added it to their menus. Writers revisited it. Social media filled with endless versions of the dish. Some more faithful, some wildly inventive. Suddenly zucchini had become fashionable again.

We’re kicking it off with suckling pig two ways. First, a three-cup-style braise served over plancha fried rice. Then, a whole pig roasted over open fire, pulled apart, and piled into Philly-style pork sandwiches with broccoli rabe and sharp provolone.

Andrew is the founder and chairman of Intuitive Content, named one of the top 100 production companies in the world, and Passport Hospitality, a restaurant and food service development company.
