Crispy Keto Air Fryer Fried Chicken

This keto air fryer fried chicken uses boneless, skinless chicken thighs with an almond-flour and Parmesan coating. The breading contains no wheat flour or bread crumbs, and the chicken cooks with a light spray of oil.

This is not one of those recipes where “keto” means settling for a sad substitute. The coating turns golden, the chicken stays juicy, and the finished pieces are sturdy enough to eat on their own or turn into an absolutely ridiculous keto chicken sandwich.

Why this keto fried chicken works

  • Almond flour and Parmesan: The combination gives the chicken a savory coating without conventional flour.
  • A light coat of cooking spray: It helps the breading stay in place when the air-fryer fan starts moving and encourages golden color.
  • Chicken thighs: They stay juicy while the outside has time to crisp.
  • An optional refrigerator rest: Letting the breaded chicken sit uncovered in the refrigerator gives the coating time to dry before cooking.

The low-carb breading

Low-carb fried chicken recipes use all kinds of coatings. Crushed pork rinds work especially well in my keto air fryer chicken tenders, but this recipe goes in a different direction with finely sifted almond flour and grated Parmesan.

The almond flour provides coverage while the Parmesan brings saltiness, flavor, and browning. Use a thin, evenly pressed coating; a heavy layer is more likely to stay powdery or fall away.

Choosing the seasoning

The card uses two tablespoons of seasoning in total: one on the chicken and one in the breading. That means a spice blend, not two tablespoons of salt. Check the blend’s salt content before measuring. Parmesan already contributes salt, so use a salt-free blend for more control, or reduce a heavily salted blend to suit its label directions. Do not taste breading after it has touched raw chicken or egg.

How to make keto fried chicken in the air fryer

Set up the egg mixture and breading before handling the chicken. Dip each thigh in the egg, let the excess drip away, then coat it with the almond-flour and Parmesan mixture. Press the coating onto the chicken instead of simply dropping it into the breading and hoping for the best.

Just before the chicken goes into the basket, spray the coating lightly with cooking spray. This step made a real difference during testing. It helped keep the breading attached and gave the exterior the golden finish fried chicken is supposed to have.

Arrange the thighs with room around them and follow the temperature, timing, and turning directions in the recipe card. Cook in batches if your basket cannot hold the pieces without crowding. Check the thickest part of every piece and make sure the chicken reaches at least 165°F (74°C) before serving.

The refrigerator trick for a crunchier coating

If you have an extra hour, place the breaded chicken on a plate in the refrigerator before air frying. Letting the coating dry produced an even crunchier exterior when I tested the recipe. The difference was not subtle. The crunch was audible.

This step is optional, so you can still make the chicken when dinner needs to happen now. But if maximum crunch is the goal, the refrigerator rest is worth planning for.

How to keep the breading from falling off

Start by letting excess egg drip away before the chicken reaches the breading. Press the coating onto the meat, spray it lightly, and handle it gently when moving it into the basket. Use tongs carefully when the recipe calls for turning.

Do not stack the chicken. Leave space between pieces and turn them carefully halfway through cooking, as directed in the card. If the underside stays wet, check whether a solid liner is trapping moisture beneath it; use the crisper plate when your appliance instructions permit. Rest cooked pieces on a rack instead of piling them on a plate. For other causes of a pale or soft coating, see why air fryer food is not getting crispy.

What to serve with keto fried chicken

Serve the chicken with a crisp salad, cauliflower mash, roasted vegetables, or your favorite low-carb slaw. Pickles and a creamy dipping sauce are never a bad idea either.

For the full sandwich treatment, add it to a low-carb bun with lettuce, pickles, and sauce. You can also find more ideas in my collection of keto air fryer chicken recipes.

Storage and reheating

Refrigerate leftovers promptly in a covered container. To reheat, place the chicken in the air fryer with space around each piece and begin checking early. Reheat chicken to 165°F (74°C). The exact time depends on the thickness of the pieces and your machine.

Avoid crowding during reheating for the same reason it matters during the first cook. Trapped steam softens the coating. A quick check of the basket is better than walking away and drying out the chicken.

Keto air fryer fried chicken FAQ

Can I make this without pork rinds?

Yes. This recipe uses almond flour and Parmesan rather than pork rinds. If you specifically want a pork-rind coating, use the tested coating from the chicken-tender recipe instead of inventing a substitution here.

Do I have to refrigerate the breaded chicken first?

No. The refrigerator rest is optional. It produced a crunchier coating during testing, but the recipe can go into the air fryer after breading when you are short on time.

Why does the chicken need cooking spray?

The light spray helps the breading stay in place and encourages browning. Spray the coating lightly rather than soaking it.

How do I know when the chicken is done?

Check the thickest part with an instant-read thermometer. Poultry needs to reach at least 165°F (74°C). Color and crispness tell you about the coating, not whether the center is safe to eat.

4.5 Stars (68 Reviews)

Ingredients

Chicken

  • 1 lb boneless skinless chicken thigh
  • 1 tbsp of seasoning of choice
  • Cooking Spray

Egg Mixture

  • 2 eggs
  • 1/4 cup heavy whipping cream

Breading

  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp seasoning of choice

Instructions

  1. Place the chicken thighs in a large bowl and rub them evenly with 1 tablespoon of your chosen seasoning.
  2. In a separate bowl, mix the almond flour, Parmesan cheese, and remaining tablespoon of seasoning.
  3. In a third bowl, whisk together the eggs and heavy whipping cream.
  4. Dip each chicken thigh into the egg mixture, let the excess drip away, then press it into the almond-flour breading until evenly coated.
  5. For a crunchier coating, place the breaded chicken uncovered in the refrigerator for at least 1 hour. This step is optional.
  6. Lightly spray the breaded chicken with cooking spray. Arrange the thighs in the air fryer basket with room around each piece, working in batches when necessary.
  7. Air fry at 350°F (175°C) for 20 minutes. Turn the chicken carefully after 10 minutes so the underside gets a turn facing the circulating heat.
  8. Check the thickest part of each thigh with an instant-read thermometer. The chicken is done when it reaches at least 165°F (74°C) and the coating is golden. Add cooking time if necessary.
  9. Carefully remove the chicken and let it rest on a cooling rack before serving.

Notes

Seasoning: The two tablespoons listed are a spice blend, not plain salt. Parmesan adds salt too. A salt-free blend gives more control; reduce heavily salted blends to suit their label directions. Do not taste coating after contact with raw chicken or egg.

Timing: The 30-minute total excludes the optional refrigerator rest and any additional batches. Thigh thickness and your appliance can change cooking time. Check every piece reaches 165°F (74°C).

Soft underside: Avoid stacking, turn carefully halfway through cooking and check that a solid liner is not trapping moisture. Rest cooked chicken on a rack.

I wasn’t sure about the tablespoons of “seasoning of choice”. What do you recommend for this? I may have missed this information in the post. I used some season salt in the flour mixture and it was a bit salty, but the chicken was still delicious. I turned it once halfway through the cooking time. Thanks for the recipe!

Try Mrs Dash in the seasoning blend. No sodium and lots of flavor

This is my second recipe attempt in an air fryer. My air fryer tends to run low from what I can tell, so I ran it at 370 for 20 mins and it was cooked well (juicy but done all the way) However, I'm thinking I need to flip the thighs at least once, the underside breading was mushy. Maybe I shouldn't batter the bottom? Taste was decent. For seasoning I used Tony Chacherre's No Salt Seasoning Blend. We are trying for low sodium in our diet also, but if anyone has any other seasoning to recommend please say so. Also wondering if this would taste good using chix breasts, my family seems to like white meat more. I'm not a very experienced cook, but determined to do better. 😁 Hence my questions! Thanks though, nice to have some form of "fried" chicken whilst on keto.
