Adds a short self-hosting section so readers learn that Unkey is hosted, the source code is AGPL, and self-hosted builds should stay current.

Several recent assistant conversations asked how to run Unkey on your own server. The assistant couldn't find any docs on it. The facts here come from
README.md,LICENSE, andSECURITY.md. Two-factor auth questions were already covered byplatform/workspace/two-factor-auth, so I left them alone.
