If corn dogs were your favorite fair food growing up, this one's for you. These corn dog bites have that same sweet cornbread and hot dog combo we all know and love, but they're baked into mini muffin bites that feel right at home for weeknight dinners, after-school snacks, or party trays.

How to Make Corn Dog Bites Recipe

These hot dog muffins come together quickly, especially if you use a small cookie scoop to portion the batter.

Step 1: Preheat the oven to 375°F and grease a mini muffin pan well with nonstick spray.

Step 2: Cut the hot dogs into small pieces so each one fits into the center of a mini muffin cup. You'll want 24 pieces total.

Step 3: In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, brown sugar, and salt until combined.

Melted butter, milk, and egg are whisked together in a glass mixing bowl.

Step 4: In a separate bowl, whisk together the melted butter, milk, and egg.

The wet ingredients are poured into the bowl of dry ingredients to make cornbread batter.

Step 5: Pour the wet ingredients into the dry ingredients and stir just until combined. Try not to overmix the batter.

Tips For Best Mini Corn Dogs 

A few small tricks make these mini corn dog muffins easier to bake, remove, and serve.

  • Spray or brush the pan well so the mini muffin pan releases the cornbread edges cleanly.
  • Fill each cup about ⅔ full because cornbread batter rises as it bakes around the hot dog pieces.
  • Cut the hot dogs evenly so each corn dog bite has the right balance of hot dog and cornbread.
  • Use a small cookie scoop to portion the batter quickly and keep the bites the same size. I use a 1 tablespoon scoop and it's the perfect size!
  • Let the bites cool for a few minutes so the corn dog muffins hold their shape when you lift them out.

Storage

These mini corn dog bites store well, which makes them great for quick lunches, snacks, or reheating later in the week.

  • Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freezer: Let them cool completely, freeze in a single layer on a baking sheet, then transfer to a freezer-safe bag or container for up to 2 to 3 months.
