Ingredients for this Recipe
One of my favorite things about this recipe is that you’ve probably already got most of what you need in your pantry. Here’s what you’ll need so you can get started:
Blackberry Filling
- 4 cups blackberries
- ½ cup sugar
- 2 Tablespoons all-purpose flour
- ¼ teaspoon salt
- 1 lemon (zest and juice)
Cobbler Batter
- 4 Tablespoons salted butter
- 1 ½ cup all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ¾ cup milk

How to Make Skillet Blackberry Cobbler
Just follow these simple instructions so you can make this easy, delicious blackberry cobbler on your smoker:
- Preheat the smoker. Set your smoker to 275 degrees F and set a 12-inch cast iron skillet right on the grill grates, then close the lid. You can also make this on your charcoal grill, gas grill, or in your oven.
- Make the filling. No peeling necessary! Rinse and drain your blackberries, then toss them with the flour in a large bowl. In a small saucepan, warm the sugar, salt, lemon zest, and lemon juice over medium heat until the sugar dissolves, then pour the mixture over the berries to coat.
- Make the batter. Add the butter to the preheated skillet, then close the lid and let it melt. While the butter melts, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg, then slowly stir in the milk. Stop as soon as it comes together because a few lumps are a good thing!
- Smoke the cobbler. Pour the cobbler batter right over the melted butter without stirring. Spoon the filling and all the juices evenly over the top. Close the lid and smoke for 60 to 70 minutes. As it cooks, the batter rises up and swaps places with the fruit.
- Serve and enjoy. Your blackberry colder is ready when the edges are golden brown and most of the filling makes its way to the top. Let it cool for a few minutes so the filling can thicken. Serve warm with a large scoop of vanilla ice cream or a little homemade whipped cream!
Susie’s Blackberry Cobbler Pro Tips
Before you fire up the smoker, I’ve got a few tips to help you nail this recipe the first time:
- Fresh or frozen berries. Both work, but if you’re using frozen blackberries, don’t thaw them first.
- Mix up the berries. This recipe works with a mix of blackberries, blueberries, and raspberries. It also tastes amazing with peaches, plums, or cherries.
- Pick a mild wood. Fruit woods like apple or cherry give the cobbler a gentle heat without overpowering the berries.

Cobbler FAQ
Can I make this cobbler in the oven?
Absolutely! Bake your cobbler at the same temperature in a preheated oven. You’ll lose the smoky flavor, but still turn out a delicious cobbler.
Can I use frozen blackberries?
Yes, add them straight from the freezer, but expect a little bit longer cook time.
How do I know when the cobbler is done?
When the edges are golden-brown and the filling is bubbling, your cobbler is ready. You can also use the toothpick test. If you stick a toothpick in and it comes out mostly clean, your cobble is good to go.
How do I store leftovers?
Move any remaining cobbler to an airtight container, then store in your refrigerator. Enjoy the cobbler for up to 3 days.
