Smoked S’mores

With this recipe, you don’t need a fire pit or roasting skewers to scratch that s’mores itch. Just fire up whatever smoker you’ve got and grab a skillet. This is the perfect dessert for BBQ because you can make it on the same smoker in the time it takes to clean up dinner. It’s also an easy way to end a cookout, family movie night, or any occasion that calls for something sweet. The smoke adds something that will have people wondering what makes your s’mores so special. If you’re ready for the perfect campfire snack (without the campfire), let’s go!

Ingredients for Smoked S’mores

Yes, s’mores ingredients are pretty basic, but doing this in a skillet on the smoker opens up the possibilities. Here’s what I went with for each one, plus a few ideas if you want to switch things up.

Graham Crackers

Regular grahams work great, but hear me out. I love these Honey Maid cinnamon graham crackers whenever I’m smoking s’mores. The extra cinnamon and sugar caramelizes a bit on the bottom grahams while smoking. They cost a little more, but add a nice touch your guests will appreciate. Again, regular graham crackers make a tasty base if that’s what you’ve got, but you won’t regret the extra cinnamon version.

Marshmallows

Let’s be honest here, the marshmallow is the heart of the s’more. If you ask me the formula is simple: bigger mallow = bigger payoff. The whole goal is getting that gooey, melty center just right, so choose wisely. I usually go for the Jet-Puffed extra large marshmallows because they’re the perfect size for s’mores. Any brand you like is fine as long as they’re big enough to fill your grahams.

Chocolate

This is where the smoker really comes into play. Cold chocolate on a s’more is a letdown every time, and smoking alongside the marshmallows melts it into something way better. Once you’ve got that melt going, you can get as creative as you want. Swap in Reese’s cups, break out a fancy dark chocolate bar, anything you love. Try doing that on a stick.

How to Make S’mores on the Smoker

This is about as low effort as smoker cooking gets.

  1. Preheat the smoker. Set your favorite smoker to 275 degrees F and load it with a mild, sweet wood like apple or cherry. You want a hint of smoke, not a smoke bomb. You can also do this over indirect heat on your grill using the two-zone method. (Check out this post if you need help setting your grill up for two-zone heat.)
  2. Assemble the s’more bottoms. Break the graham crackers in half, grab a large cast iron skillet, and arrange the graham halves in the bottom of the skillet. Next, top each graham cracker with a chunk of your chosen chocolate (remember, get creative here!) then set a marshmallow on top of each.
  3. Smoke the marshmallows. Place the skillet on the grates of your preheated smoker, close the lid, then let it ride for 10 to 15 minutes. The chocolate will start to melt nicely and the marshmallows will take on a kiss of the smoky flavor.
  4. Melt and finish. This step is totally optional, but I highly recommend it for that authentic s’mores vibe. Slide the skillet under your oven’s broiler for 1 to 2 minutes to give the marshmallow tops that signature toasty look. A kitchen torch works too, if you’ve got one handy.
  5. Serve and enjoy. Cap each s’more with the other half of the graham cracker and serve immediately while everything’s still warm and gooey. Make sure to have plenty of napkins on hand because these bad boys are messy!

How Long to Smoke S’mores

There’s no meat here, so this isn’t a cook-to-temp situation. It’s really just about watching the marshmallows for puffiness. At 275 degrees F, 10 to 15 minutes is usually all it takes for the marshmallows to puff up. Keep an eye on them toward the end. Every smoker runs a little differently, so I recommend you start watching them at around 10 minutes. Pull your marshmallows when they’re puffed to your liking, and you’re good to torch or top.

Susie’s Smoked S’mores Pro Tips

Here are a few tips to help you make the perfect s’more every time:

  • Don’t skip the scorch! I know I’ve already mentioned this a few times, but that’s because it’s important. If you want to give your marshmallows that true “campfire” look, broil them for a minute or 2 in your oven or hit them with a kitchen torch. You want your s’mores to look as amazing as they taste.
  • Get crazy with it. I swear by the cinnamon grahams, but if that’s not your thing, go with original or even chocolate graham crackers. Switch up the chocolate with peanut butter cups, caramel-filled bars, whatever sounds good melted under a mallow.
  • Glove up. Because this recipe involves a lot of moving and arranging over the smoker, make sure you’ve got a pair of heat-resistant gloves on hand.
