Crispy Fried Mozzarella (Sticks, Squares, Balls & More)

My deliciously crispy, supremely stretchy, perfectly creamy Fried Mozzarella recipe is the crowd-pleasing vegetarian appetizer you’ve been searching for. Melty cheese is enrobed in crunchy breading, deep fried until golden, and served with a side of marinara sauce for a snack you won’t be able to resist.

American fast-casual restaurants have notoriously delicious appetizers like Chili’s fried mozzarella, crispy onion rings, and mashed potato fries. But honestly, who wants to pay over $10 for 3 measly pieces of cheese?? Sorry, but they’re not THAT good. Luckily, you can get all the gorgeously golden-brown goodness you’d expect from Chili’s or Olive Garden, but at a fraction of the price of eating out. DIY FTW!
I originally published this recipe in 2022 and have since updated it with new photos, improved instructions, and extra success tips.
Ingredients & Substitutions

- Low-Moisture Mozzarella – Make sure you’re reaching for block-style shreddable mozzarella, not the fresh variety packed in oil or water.
- All-Purpose Flour – For dredging the cheese so the eggs have something to hold onto.
- Large Eggs & Milk – For the second stage of breading, so the breadcrumbs have something to grab.
- Breadcrumbs – I recommend using Japanese-style panko breadcrumbs for extra crunch.
- Dried Oregano – For classic Italian flavor. If you’re using fresh, increase by 3x. You can also swap in Italian seasoning if you prefer.
- Garlic Powder – Optional, but yummy. Garlic adds sweetness and depth. If you love the flavor of garlic but can’t eat it, try adding a pinch or two of asafoetida (hing) for a similar vibe.
- Salt & Black Pepper – Just the basics! Make sure to use freshly cracked black pepper for the most flavorful results.
- Neutral Oil – Any neutral-flavored oil with a high smoke point will do the trick. Avocado oil, canola oil, vegetable oil, or peanut oil all do the trick.

How to Make Fried Mozzarella
1. Cut the mozzarella: Cut the low-moisture mozzarella into your preferred shape. You can make classic mozzarella sticks, squares, triangles, rounds, balls, bites, or thick slices.

2. Coat in flour: Lightly coat each piece in flour, shaking off any excess.

3. Double bread: Dip into the egg mixture, coat with breadcrumbs, then repeat the egg and breadcrumb coating once more to create a thick, crispy crust.

4. Freeze: Arrange the breaded mozzarella on a tray and freeze for 30–60 minutes until firm.

5. Fry: Heat oil to 350°F (180°C). Fry for 1½–3 minutes, depending on the size, until deeply golden and crispy.

Choose Your Favorite Shape

One of the best things about this recipe is that it works with almost any shape. Make classic fried mozzarella sticks, mozzarella squares, triangles, bites, cubes, balls, or even thick rounds. Just keep the pieces about ½-inch (1cm) thick so the cheese melts before the coating overcooks.
Low-Moisture Mozzarella Is Key!
Fresh mozzarella (the kind packed in water or oil) has too much moisture for frying. As it heats up, that excess water can cause the coating to crack and separate, leaking cheese before the crust ever turns golden.
Low-moisture, block-style mozzarella holds its shape much better while still melting beautifully inside.
Double Coat for Maximum Crunch

Running the mozzarella through the flour-egg-breadcrumb process twice builds a thicker, sturdier crust that seals in the cheese far more effectively so you get fewer leaks and a more satisfying crunch.
Freeze Before Frying
Popping the breaded mozzarella in the freezer for at least 30–60 minutes firms up the coating and gives it a head start, so it has time to turn golden and crisp before the cheese fully melts and escapes.
More Expert Tips & Tricks
- Press the breadcrumbs on firmly. Don’t just roll the cheese through the crumbs. Make sure to press gently with your hands so they stick, especially for the second coat.
- Keep a close eye on oil temperature. Maintain your oil at a steady 350°F (180°C). Too cool, and the mozzarella will soak up excess oil, turning greasy instead of crisp. An instant-read or deep-fry thermometer takes the guesswork out and ensures consistent results every time.
- Fry in batches—don’t crowd the pan. Adding too many pieces at once drops the oil temperature fast, leading to soggy, unevenly cooked mozzarella. Give each piece room to fry evenly, and let the oil come back up to temperature between batches.
- Drain on a wire rack, not paper towels. A rack lets air circulate underneath, keeping the bottom crust from getting soggy. (Paper towels trap steam against the crust.)
- Serve immediately. Fried mozzarella is at peak crispiness the moment it comes out of the oil. The longer it sits, the more the residual heat softens that crust, so plate it fast and serve right away.

Optional Variations & Dietary Adaptations
- Air Fried Mozzarella Sticks – Preheat the air fryer to 390°F (200°C). Spray both sides of the breaded mozzarella lightly with oil. Arrange in a single layer, leaving space between each piece. Air fry for 5–7 minutes, or until golden brown and crispy.
- Nashville Hot Mozzarella (Chili’s-Inspired) – Whisk together melted butter, cayenne pepper, brown sugar, and a splash of the frying oil, then brush generously over the fried mozzarella right after cooking. It’s a spicy-sweet twist that pairs perfectly with the gooey cheese center.
- Different Shapes: This same recipe works for mozzarella sticks, mozzarella balls, mozzarella bites, mozzarella cubes, triangles, squares, and thick slices. Simply adjust the frying time depending on the size.
- Seasoning Swaps – Get creative with the breadcrumb mixture! Add extra garlic powder, Italian seasoning, grated Parmesan cheese, or chili flakes for a flavor boost. Each swap gives the coating a different personality—cheesy, herby, or spicy—without changing the frying method.
- Gluten-Free Fried Mozzarella – Swap the all-purpose flour for a 1:1 gluten-free flour blend or rice flour, and use gluten-free panko-style breadcrumbs (widely available in most grocery stores).

How to Serve Fried Mozzarella
Fried mozzarella is best served hot while the cheese is still stretchy. Pair it with:
- Homemade tomato sauce or Marinara
- Harissa for a spicy twist
- Ranch dressing
- Garlic aioli
- Basil Chimichurri – a fresh, herby twist that’s surprisingly delicious with melted mozzarella.
- Hot honey
- Fresh basil and grated Parmesan

Storage & Reheating
- Refrigerator: Store in an airtight container, separating layers with paper towels to absorb moisture. Keeps well for up to 3 days.
- Freezer: For longer storage, freeze the fully breaded (uncooked) mozzarella on a baking sheet until solid, then transfer to a freezer-safe bag or container. Keeps for up to 2 months. This is actually the best way to prep ahead, since freezing before frying helps the coating crisp up beautifully.
- Reheating: Skip the microwave, which softens the coating and makes the cheese rubbery. Instead, reheat in a 375°F (190°C) oven for 8–10 minutes or in an air fryer for 4–6 minutes, until hot and crispy again.
- Cooking from Frozen: If frying from frozen (breaded but uncooked), no need to thaw first. Just add an extra 1-2 minutes to your frying or air-frying time to ensure the cheese melts fully before the outside over-browns.

- Oil see notes
Instructions
- Prepare the mozzarella: Cut the mozzarella into your desired shape:
- *Mozzarella sticks – great for dipping and sharing.*Mozzarella rounds or steaks – perfect as an appetizer.*Mozzarella cubes or bites – ideal for party platters.
- Aim for pieces about ½-inch (1cm) thick.
- Set up the breading station: Place the flour in one shallow bowl. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the breadcrumbs, oregano, garlic powder, salt, and pepper.
- Bread the mozzarella: Coat each piece in flour, shaking off any excess. Dip into the egg mixture, then coat thoroughly with the breadcrumb mixture.
- For extra crunch: Repeat the egg and breadcrumb coating one more time. The double coating creates a thicker crust and helps keep the cheese from leaking during cooking.
- Freeze: Arrange the breaded mozzarella on a tray and freeze for 20–30 minutes. Don't skip this step; it helps the coating crisp up before the cheese melts.
- Heat the oil: Fill a deep skillet or saucepan with about 2 inches (5cm) of oil. Heat to 350°F (180°C).
- Fry: Working in batches, carefully fry the mozzarella until deeply golden and crispy, about 1–2 minutes per side, depending on the size and shape.
- Air Fryer Version: Preheat the air fryer to 390°F (200°C). Spray both sides of the breaded mozzarella lightly with oil. Arrange in a single layer, leaving space between each piece. Air fry for 5–7 minutes, or until golden brown and crispy.
- Drain and serve: Transfer to a paper towel-lined plate and let cool for 1 minute before serving. Serve immediately with warm marinara sauce.

Notes
- Use low-moisture mozzarella: Avoid fresh mozzarella, which contains too much moisture. As it cooks, the excess water can cause the coating to separate and the cheese to leak out before the crust becomes golden and crispy. Low-moisture mozzarella melts beautifully while holding its shape better than fresh mozzarella.
- Double coating is recommended: It creates a thicker crust and greatly reduces cheese leakage.
- Keep the oil hot: Maintain the oil at 350°F (180°C). If the oil is too cool, the mozzarella will absorb excess oil and become greasy. For the most consistent results, use an instant-read or deep-fry thermometer.
- Freeze before cooking: This gives the coating time to crisp before the cheese melts.
- Don’t overcrowd the pan: Fry in batches to maintain the oil temperature.
- Best served immediately: Fried mozzarella is at its crispiest right after cooking.
- Try different seasonings: Add garlic powder, Italian seasoning, Parmesan cheese, or chili flakes to the breadcrumbs for extra flavor.

FAQs
Not quite, at least not in the form most people know it. Fried cheese has roots in various cuisines, but the popular breaded, deep-fried mozzarella stick as an appetizer is largely an American creation, especially popularized through U.S. restaurant chains and pub fare. Italy has similar fried cheese dishes—like carrozza, a fried mozzarella sandwich from Naples—but the panko-crusted, dip-with-marinara version is more American comfort food than traditional Italian cuisine.
Not really. Mozzarella has a low melting point, so without a breaded coating to act as a protective barrier, it will simply melt and ooze out into the oil rather than holding its shape. The breading is what creates a sealed crust that lets the cheese heat through and get gooey while staying contained. If you want fried cheese without a breaded exterior, you’re better off reaching for halloumi, paneer, or bread cheese.
Yes. The best way is to bread the mozzarella and freeze it before frying. When you’re ready to serve, fry it straight from frozen, adding 1–2 extra minutes to the cooking time. This gives you the crispiest results and makes it perfect for parties or entertaining.
