Eric Ellis reposted thisEric Ellis reposted thisWorking closely with food scientists over the the last 12 years has given me a real appreciation for just how complex our food system is. Food and ingredients move across countries, suppliers, processors, distributors, retailers, and restaurants before they ever reach our plates. When something goes wrong, understanding where it happened and how to prevent it from happening again requires good science and strong systems. That’s why it’s so important that food scientists are part of the conversations happening right now around food safety. Over the past several weeks, I’ve watched our team at the Institute of Food Technologists (IFT) bring that expertise forward in a number of ways. Our media efforts have helped consumers better understand the science behind the recent Cyclospora outbreak and the increase in food recalls we’ve seen this summer. Our Global Food Traceability Center continues working across the food system to strengthen traceability, and our advocacy work helps ensure science and the perspectives of food scientists are represented in policy and regulatory conversations. Keeping our food supply safe takes scientists, industry, government, public health, and others across the food system working together, and it requires credible science to be at the center of those conversations. One message I often share is that our kids are learning financial habits whether we're intentionally teaching them or not. Recently, we sat down as a family to review our household budget, talk through trade-offs, discuss ways to limit eating out :), and align on what we're saving for. Financial literacy isn't just about dollars and cents. It's about helping the next generation understand priorities, delayed gratification, and shared decision-making. Serving as a Board Member at the IFT Student Association (IFTSA) gave me an opportunity to interact with experienced professionals in the Food Systems within Institute of Food Technologists (IFT) and spread my wings out wide. It posed a challenge to me and I was up to the task. A volunteer opportunity that allowed me the opportunity to work with team across timezones and still got work done is worth celebrating. An opportunity that started off through networking at a SAAFoST conference grew over time to be an incredible oppotunity that availed many more opportunities for me an many other young Africans in my networks especially in the science of food. I am grateful for the platform and the incredible networking opportunities it continues to avail including the very recent exchange program at the University of Missouri-Columbia under the supervision of Kiruba Krishnaswamy. At IFT Student Association (IFTSA) I had the Opportunity to serve among some of the most incredible leaders in the Science of Food. During the two years I worked closely with Jana Schreuder Rachael Enfield Stefhanie Loaiza Sánchez Luuvan Hoang Sebastian Garzon Aviva Stein Jenna Fryer, Ph.D. Viral Shukla Chamali Kodikara Katelyn Boyle, Ph.D. Paula Szymanowicz Toyosi 'Timmy' George, Ph.D Mauricio G. Akshara Nair Rañia Marie Buenavista April Huang Divine Eche Ikenna Okehie Charley Wang. As well as IFT Staff such as Stephanie Walaszek Christina Ginardi, M.Ed., PMP Nina Steele Seneshia Jones and IFT Board Members Christie Tarantino-Dean Seán Leighton Christopher R. Daubert Gunnar Sigge Noel E. Anderson PhD Mohamed Badaoui Najjar, PhD Darryl Riley Peggy Poole Arti Arora Faith Critzer Tejas Bhatt, MS among others. The one thing that I am most proud in my service at IFT is that I was allowed institute the first official IFT Mentorship Program under the Member Resource Groups. Seeing this program come to life and the impact it continues to create gives me so much joy and fulfillment. As I celebrate this incredible experience, I have been selected by the World Federation of United Nations Associations (WFUNA) and FAO and awarded a partially funded opportunity to attend the Global Model FAO event from 23 to the 28th November 2026. The partial funding covers the cost of accomodation while but excludes other costs like travel costs, visa costs and registration. I am keen to participate in this wonderful opportunity and I am seeking for support. Across the country, neighbors are facing sustained pressure from the cost of food, housing, transportation, and health care. Food banks and community partners are responding every day to elevated and sustained demand, but the charitable food system cannot meet this challenge alone. As we look ahead, I believe the opportunity is not simply to respond to today's challenges, but to build greater long-term capacity for the future. That means learning from one another, forging new partnerships, and exploring how we can work together to create more resilient communities and stronger support systems for our neighbors. Having served as interim department head since fall 2025, Critzer will prioritize efforts to increase undergraduate enrollment to meet growing workforce demands across the food industry. Through #GPCC’s Let’s Talk Housing: Renters Listening Sessions, I’ve had the opportunity to hear directly from residents about what it means to rent, remain, and build a life in our West Side neighborhoods. As someone who has spent years studying communities, placemaking, and neighborhood change, these conversations are also reminding me of something important: data can tell us what is happening in a neighborhood, but residents help us understand what those changes actually mean. As we continue developing the Garfield Park Community Council’s #HousingPreservationInitiative, we are looking at market trends, properties, and partnerships, but most importantly, we are listening to residents. I’m grateful to every resident who has trusted us with their experiences, concerns, and ideas. My business has grown faster than I expected. Today, I'm thrilled that Amazing Insights has several clients and I am hiring two people to join the team to expand our capacity and reach. That is an exciting milestone, and it reflects a need I continue to see in the market. Companies at this stage often have reached a point where the financial complexity of the business has outgrown the resources they have internally. They may not yet need—or want—the cost of a full-time CFO, but they do need experienced financial leadership to help management make better decisions. That is the gap the fractional CFO model can fill. The clients where Amazing Insights adds the most value generally fall into three groups: - Building and scaling fast-growth companies. Rapid growth can expose weaknesses in accounting, forecasting, systems, processes and people that were manageable when the company was smaller. - M&A-intensive companies. Acquisitions can accelerate growth, but they also create significant challenges in due diligence, valuation, financing, integration and measuring whether the deal is actually creating value. - Companies preparing for an IPO or a sale to private equity.
