Stephen Kaufman liked thisStephen Kaufman liked thisHigh protein baked goods are all the rage right now! Consumers are asking for highly nutritious products that also taste great. When developing high protein products, there are a myriad of things to consider. Ease of manufacturing, ingredient functionality, and final product attributes are the most important considerations to keep in mind, but this does not need to be scary. At Merlin Development, we have developed tricks to chase away the spooky elements, including the use of novel sources of protein. Many times, our customers are also looking to layer in additional guardrails in terms of making front of package claims and matching a target Nutrition Facts Panel. Combining our food science backgrounds with the art of culinary, Merlin Development can get you there.

What’s new in Wisconsin—the Dairy State? Big things are happening across Wisconsin’s dairy and cheese industry, and they’re worth celebrating. Westby Cooperative Creamery, the only cottage cheese producer in the state, is in the middle of a $15 million facility upgrade. This investment will cut processing time from 16 hours to just 8, while boosting yields 10–15% per batch. Demand is already outpacing supply, and while the upgrade won’t add new jobs, it will secure existing ones and likely create a positive ripple effect for local dairy farmers producing more milk. That’s supply chain strength in action. Link to article. https://lnkd.in/gvejv-9f In addition, six Northeast Wisconsin dairy companies have been awarded up to $50,000 each in grants from the Wisconsin Department of Agriculture, Trade, and Consumer Protection to improve processes, equipment, and profitability: • Briess – Chilton • Milk Specialties Company (Actus Nutrition) • Pine River Dairy – Manitowoc • Pine River Pre-Pack – Newton (Manitowoc County) • Rosewood Dairy Inc. (Renard’s Cheese) – Sturgeon Bay • Widmer’s Cheese Cellars – Theresa (Dodge County) Link to article. https://lnkd.in/g3HP7Vqc I cannot write a Dairy post without mentioning Alpinage Cheese. Late last year, Alpinage Cheese tripled its production and moved into a new warehouse facility, a huge milestone for a growing Wisconsin cheesemaker. They specialize in Raclette cheese, offering three standout varieties: Classic, Black Truffle, and Garlic & Dill. You can find Alpinage Cheese directly on their website or at Sendik’s and other great specialty retailers. If you haven’t tried Raclette yet, this is your sign. https://lnkd.in/gXStk_uM Wisconsin continues to prove why it’s the Dairy State, innovation, investment, and world-class cheese all in one place. These investments are all about modernization, efficiency, and long-term sustainability, helping Wisconsin dairy manufacturers stay competitive and profitable well into the future. Now I’d love to hear from you: Are there new factories, facility upgrades, or job growth happening in your city, town, or state? Drop them in the comments and let’s celebrate success together. #wisconsinsupplychainstrong #wisconsincheesemfg #wisconsinmanufacturing #dairyindustry #cheese #alpinagecheese
