Rebuilding our local food industries. It was great to see the Enterprise Minister and the Agriculture Minister recently announce the availability of funding for Irish flour mills. There is now only one remaining mill in Ireland, having come from a base of hundreds of locally owned mills. A flour mill does not just grind grain, it builds a community. Flahavan's in Kilmacthomas have shown how one strong company and product can provide jobs and income across the country. By providing a guaranteed market for Irish oats, Flahavan's have built farm jobs across the region, as well as at the mill and all it's suppliers. Tillage farmers who were growing barley for animal feed and bulk malting now have a customer who pays a premium for quality oats. The same will be possible for wheat farmers looking to grow a quality wheat. I see this as a signpost for how we should view our entire food production system. Ireland should focus on quality, on regional difference, on our environment, on our storied past as a food producer. The same financial incentives should be offered to rebuild our horticultural industries, our small scale dairies and indeed our local abbatoirs. We have allowed our focus on food to become industrialised, concentrating primarily on bulk milk powder. Ireland is unique in Europe in having a soil that has never been exposed to the toxins of air pollution and heavy industry and we should sell this point hard. Ireland should gently steer towards rebuilding our horticulture and tillage sectors and rebuilding our food security. We should promote the idea of genuinely grass fed beef and dairy products, while reducing the five million tonnes of imported animal feed. Ireland still has a reputation for clean, green food, that is hanging by a thread in my opinion, but can be rebuilt. Of course, we need to continue supplying the factories with bulk milk for the time being, but we need to stop building new dairy factories and start rebuilding communities. Today I submitted a speaker application for Fine Food Australia 2026. My proposed talk focuses on a challenge we don’t talk about enough — food waste that occurs before food even leaves the farm. Over the past two months we’ve diverted more than 4.5 tonnes of surplus fruit from livestock feed and landfill by transforming it into shelf-stable ingredients. Right now much of that work is happening with citrus. By working directly with growers, we’re exploring how dehydration can turn surplus crops into versatile ingredients used across foodservice, manufacturing and retail.
