One thing the wine industry rarely talks about: Great wine doesn’t sell itself. I’ve seen outstanding producers, beautiful vineyards and impressive portfolios — yet the wines barely moved in restaurants. Not because the quality wasn’t there. But because no one built the bridge. In HoReCa, the person recommending the wine matters more than the wine itself. If the team on the floor doesn’t understand it, doesn’t feel confident describing it, doesn’t connect with the story — it stays on the list. The turning point is rarely another tasting note. It’s alignment. When the people presenting the wine believe in it, the guest feels it. That’s when bottles start moving.
