At Dean’s in New York, the house Gin & Tonic has a slightly savory bent. Its base is salty gin made from English seaside botanicals, which mingles with fino sherry and some olive brine in the drink. The sparkling topper follows the Gin Sonic approach: half light tonic water and half club soda “to keep the cocktail from having too much sweetness or too much body,” says head bartender Laurel Delany. It is, after all, meant to be breezy.

- 1 1/2 ounces gin, such as Fishers
- 1/2 ounce fino sherry
- 1/2 ounce olive brine
- equal parts club soda and light tonic water, such as Fever Tree Light Tonic, to top
Garnish: three pitted olives on a skewer
Directions
- Add all ingredients to a Collins or highball glass over ice.
