My Spain visa appointment is on October 10. My bank statement is dated till October 3. Will it create any problem?

It’s perfectly normal for an applicant’s latest statement to end before their appointment date. Within a month is the typical rule of thumb AFAIK.
Assuming you are providing at least 3 months’ worth, a statement dated just a few days before your appointment will not cause a problem.
