Chad Brauze posted thisAfter an incredible run with the team at Sweetgreen, I'm thrilled to share that I'm stepping into my next chapter with Pura Vida Miami. What drew me to Pura Vida is something I deeply believe in: the ability to combine chef-crafted food, ingredient integrity, and genuine hospitality into an experience that feels both elevated and approachable. That balance is rare and hard to scale without losing it. That's exactly the work I'm looking forward to. Building and expanding the systems that protect food quality, sourcing standards, and culinary creativity as Pura Vida grows and reaches more markets craving high-quality ingredients and thoughtful preparation. Great culinary brands earn loyalty through consistency. Guests should have the same experience whether they're visiting location one or location fifty. That's the standard I'm here to help protect. Excited for the future with founders Omer Horev and Jennifer Horev and looking forward to the road ahead with Andrew McCaughan, Bruno Cardinali, Allan Kronfeld, Brett Damato, and Dori Konig.

Chad Brauze shared thisAfter an incredible run, I'm leaving my role as Head of Culinary at Sweetgreen, and I want to make sure the right person takes my place. 🌱 🥗 🥬 This job changed how I think about food. Not just what goes on the plate, but how it's grown, sourced, built into systems, and experienced by millions of people. It's genuinely one of the most impactful culinary leadership roles out there. Sweetgreen is looking for someone who brings serious culinary chops AND a curiosity about how food systems work at scale. Someone who can lead a team, influence a supply chain, and still geek out over a really good dressing. Sound like you (or someone you know)? DMs open. Always happy to talk about what makes this place special.

Chad Brauze posted this🥗 🥬 🌯 We're hiring: Senior Manager, Product Development & Culinary Commercialization At sweetgreen, we obsess over every ingredient that goes into our bowls. From our Function Health collab with Dr. Mark Hyman to the Chicken Sesame Crunch hitting menus now, we're moving faster than ever — and we need someone who can turn a great benchtop idea into a great product at scale. That's where you come in. We're looking for a culinary commercialization pro who lives at the intersection of food science, supplier relationships, and operational rigor. You'll be the bridge between our Chef Team's gold standard and the production reality that feeds hundreds of thousands of people every day. Think: vetting suppliers, leading cross-functional tastings, navigating Stage Gate, and partnering with QA, Supply Chain, and R&D — all in service of real food done right. If you've got 5+ years in qsr/fast casual, food production or commercialization, a passion for quality at scale, and you're not afraid to tell a supplier their texture is off — we want to hear from you. 📍 LA-based

Wine education is in a moment of self-reflection — and it’s overdue. A recent article by Seth Cysewski articulates a tension many of us recognize: despite unprecedented access to certifications, digital tools, and educational content, wine professionals still freeze under real service pressure. That diagnosis is accurate. Necessary, even. Where I diverge is in what we hold responsible. The issue isn’t screens versus service. It’s that too much wine education is designed to be complete rather than usable, impressive rather than applicable. Wine demands two modes of thinking: • slow learning — structure, context, cause and effect • fast recall — clarity, confidence, language under pressure When we expect one tool to do both, it fails at both. I’ve written a short essay exploring this design problem — and what a quieter, more humane future for wine education might look like. A practical companion piece, focused on what actually belongs on the floor, will follow. https://lnkd.in/g9GMDcCg

The State of Hospitality in December 2025: A Data-Driven Reality Check As culinary professionals and hospitality operators navigate the busiest season of the year, we're seeing unprecedented industry dynamics that demand our attention. I'm sharing insights from our latest Chef's Ink News episode—a comprehensive analysis of the current hospitality landscape featuring real data, actionable strategies, and honest conversations about the challenges we're facing. 📊 KEY INDUSTRY METRICS: REVENUE GROWTH: • Global hospitality industry: $7.4B projected holiday revenue • U.S. restaurant sales: $1.1 trillion (2025 projection) • Premium dining bookings: +24% year-over-year • Gift card sales: +13.2% (Black Friday), +17.7% (Thanksgiving weekend) CULINARY INNOVATION: • Global fusion cuisines (Dong Bei, Nigerian, Peruvian, Ecuadorian) entering mainstream • Experiential/immersive dining: $1.2B revenue projection • Open-fire cooking resurgence driven by authenticity demand • Social media integration now critical for restaurant success TECHNOLOGY ADOPTION: • 41% of restaurants investing in AI/automation (2025) • AI-driven inventory management reducing food waste 30-40% • Predictive scheduling optimizing labor costs • Menu engineering through data analytics becoming standard WORKFORCE CHALLENGES: • 18% labor shortfall projected for 2026 • Chef positions represent 25% of hardest-to-fill roles • 80% of hospitality workers reporting burnout symptoms • Average hospitality wages: $22.70/hour (rising, but retention remains critical) 💡 WHY THIS MATTERS: As we experience record revenue alongside record burnout, the hospitality industry is at an inflection point.
