This week also marks another milestone as I submitted my final consultancy project alongside Katie Leyland and Isher Sikka for Cedar Court Hotels Yorkshire . It feels great to have completed such a rewarding piece of work and to reflect on everything we’ve achieved throughout our studies. I’d like to express my sincere thanks to all of the lecturers at Leeds Beckett University and a special thank you to Dr Peter Robinson and Dr Lisa Gorton for your support, guidance, and encouragement over the years. Their expertise and dedication have made my university experience both enjoyable and enriching. I am very proud of what I have accomplished and grateful for the friendships, opportunities, and experiences I’ve gained along the way. I am excited to see what the future holds and to begin the next chapter!

It quietly bleeds your bottom line dry with each shift. Over-portioned steak, wilted herbs, forgotten prep containers in the walk-in with vegetables, proteins and sauces, and unnecessary trim compounds into lost profit night after night. In an industry built on razor-thin margins, one careless habit can snowball into thousands of dollars walking out the back door. Kitchens move fast, but speed without discipline creates chaos: I have seen it time and time again, over-ordering, poor rotation, inconsistent execution, lack of management checking the coolers daily and product being treated as disposable instead of valuable. What this teaches is careless execution, bad habits and showing the staff that if the Sous Chef or Executive Chef don’t care, why should I? The strongest kitchens understand that every ingredient has a cost far beyond its price tag. Labor, sourcing, storage, preparation, and the effort it took to get it onto the plate. I believe true culinary leadership comes from creating a culture of accountability and respect for the product. Respecting ingredients means using them with intention, maximizing yield, cross-utilizing components, and most importantly, teaching teams to think beyond convenience. In my work as an Executive Chef and Culinary Consultant, I have found that waste is often a reflection of deeper operational problems: lack of communication, poor systems, weak training, or loss of pride in the craft. The chefs and teams that succeed long-term are the ones obsessed with details, because profitability lives in the details. A disciplined kitchen doesn’t just produce better numbers; it produces better cooks, stronger standards, and a deeper appreciation for the food itself. I traveled to support my superstar🌟 friend Andrea Ross (Viner) as she shared her story and wisdom at TEDxSt Laurent Blvd. Blessed to spend some time with the Viner hype squad and celebrate such a special moment. From there, we wandered the city with her crew who knew all the best spots, followed by a full day at the FORMULA 1 GRAND PRIX DU CANADA, ending with a concert featuring Matt Lang and Simple Plan. Met great people, sampled incredible food, practiced my French, danced my little heart out, and made wonderful memories along the way. A reminder that some of the best experiences in life come from supporting great people, saying yes to adventure, and being fully present in the moment. Montréal, you were magic.

Seeing our property transformed into a venue capable of hosting an event of this scale was a reminder of just how much work, planning, and teamwork has gone into preparing for the week ahead. From operations and facilities to food & beverage, security, parking, and member services, so many teams played a role in making the evening a success. A special thank you to our Club President, Andrew Panzo, for his leadership, support, and commitment throughout this process. The partnership between our membership, leadership, and staff continues to make opportunities like this possible. We would also like to recognize our Purchasing Team, led by C.J. Jackson, along with Assistant General Manager Thain C. Moyles, CCM, and Clubhouse Manager Abigail Fry, CCM, whose coordination and planning were instrumental in successfully executing an event of this scale. Our Facilities Team, led by Franco Sciotto, put in months of preparation leading up to last night’s concert. Their creativity, planning, and attention to detail ensured the evening ran seamlessly from start to finish. The amount of behind-the-scenes work required for an event of this scale cannot be overstated, and their efforts played a major role in the success of the night. June 11, 2025 Statement from the New York State Latino Restaurant Bar & Lounge Association President Sandra Jaquez The New York State Latino Restaurant Bar & Lounge Association applauds the introduction of Int1301 and thanks Majority Leader Farías for her leadership in championing this important legislation. By codifying the Department of Health and Mental Hygiene’s inspection protocols, this bill would bring much-needed transparency to a system that has too often left small businesses in the dark. For our members—many of whom are minority entrepreneurs—this means clearer guidance on how to address violations and stay in compliance with complex regulations. These are hardworking business owners who want to do the right thing, and this bill would help ensure they have the tools and information to do just that. We look forward to working with the Council to get this meaningful legislation over the finish line and create a more fair and supportive environment for the entire hospitality industry.

Flat Iron restaurants acquired by TriSpan and McWin nvestors McWin and TriSpan have teamed up to secure a co-control majority investment in the Flat Iron restaurant chain. The deal will see Piper, the private equity firm which took a £10m stake in Flat Iron in 2017, exit the business. McWin and Trispan said they planned to continue to expand the steak restaurant group in the UK as well as oversee its “first steps into international markets”. Flat Iron was founded in 2012 by Charlie Carroll and has grown to 18 restaurants across London, Manchester, Leeds and Cambridge. For a time, it sold its signature steaks for £10, but they are now priced at £15. Tom Byng, who has led Flat Iron since 2021, will remain as chief executive of the business through its next stage as growth. Byng said: “Our success at Flat Iron is a team effort from the pot wash to the boardroom, and we are pleased to welcome McWin and TriSpan to the Flat Iron family. “Their deep experience and knowledge of the sector are second to none and will be invaluable as we continue our mission to serve ‘remarkable steak’ to more locations in London, across the UK and abroad.” McWin also backs restaurants including Gail’s, Sticks’n’Sushi and Big Mamma Group. Flat Iron is the first acquisition for McWin’s newly launched Foodservice Fund, which is dedicated to lower to mid-cap European foodservice companies it believes have the opportunity to scale. TriSpan has made the investment through its Rising Stars Programme, which has also backed restaurant brands Pho, Mowgli and Rosa’s Thai. Robin Rowland, operating partner at TriSpan, said: “The UK dining out market is a vibrant growing sector of £110b+ turnover that continues to innovate, and Flat Iron is a clear winning brand offering outstanding value that truly delivers to a wide group of guests throughout the week.” Harry Goss, partner and head of foodservice at McWin, added: “We believe that Flat Iron has the right to become a multi-national British champion.” Houlihan Lokey advised Flat Iron on the transaction. This requires three critical transitions: From Estimate to Data: Moving past rough inventory estimates to adopting real-time, data-driven waste and yield management platforms (leveraging ERP systems or specialized software). This is the key to moving food cost from the high 50s down to the low 40s. Governor Wes Moore joined Plamondon Hospitality Partners and local leaders to break ground on the new Marriott Downtown Frederick hotel and conference center, marking a significant step in Frederick’s economic growth. The $104 million project, supported by $23 million in state funding, will create jobs and boost tourism and local business. - The hotel will feature 204 rooms, over 26,000 sq. ft. of meeting space, and a 250-space public parking garage. - Expected to generate $1.5 billion in private sector spending over 25 years and create around 200 jobs. - It will be the only facility in Frederick capable of hosting large-scale conferences and business summits under one roof. A Message to the Harshest Critics of Hospitality: The loudest critiques often come from those who’ve never lifted a glass, made a drink, or been “in the weeds.” If you’ve never served tables on a slammed Friday night or juggled ten guests while remembering modifiers, it’s easy to judge. Yes — service has changed since the pandemic. Standards have dropped in some places, and yes, the guest experience isn’t always what it used to be. But let’s be real: the industry took a hit. Burnout, staffing shortages, low wages, and emotional labor have worn people down. But here's the good news: With proper training, fair leadership, and a solid team, hospitality can — and will — make a comeback. Now, a few tips for guests (especially those new to dining out or attending large group events): 🥂 Be mindful of YOUR timing If you’re in a rush, please don’t punish the staff. Planning ahead is your responsibility — not a reason to mistreat your server. 👥 Large group? One check is the standard. Separate checks slow service, confuse accounting, and aren't always feasible during peak hours. Don’t take it personally — it’s logistics. 🍽 Dining out is a shared experience You’re not just at a table. You’re part of a larger system that includes cooks, servers, bartenders, hosts, and managers — all working hard to give you a great experience. Respect goes both ways.
