Lindsey Cunningham shared this15 years ago today, RollinGreens began with an incredible chef, a business woman and a big idea. We’ve never chosen the easy path. When food trucks were illegal in Boulder, we showed up every Tuesday to the city council until change happened. We built the first fully commercial kitchen on wheels, then kept pushing forward, creating the only ever Millet Tots, stepping into Shark Tank, launching on QVC, entering Costco, Whole Foods, Publix, HEB, Sprouts and more, serving our Military, evolving from a food truck into a national consumer packaged food brand. From frozen to shelf-stable, from local hustle to over 6,000 stores nationwide, every chapter has been fueled by the same mission: to make healthy food accessible, delicious, and real. I’m incredibly proud of how far we’ve come, deeply grateful for our community, and excited to keep building what’s next. We envision it, believe it and build it!

In February 2025, I was chatting with my good friend and mentee, Aditi Joshi, about how hard it was for her as an international student to navigate the tricky visa process and job market in the US, even after graduating from Watson Institute and University of Colorado Boulder - Leeds School of Business. I shared with her that I had a dream about launching a cooking show where I chatted with guests about important life and career topics while making their favorite comfort food. Unfortunately, with my full time day job at Rudi's Rocky Mountain Bakery, I did not have time to launch this. Aditi immediately offered to be my producer and created an amazing plan on how we could bring this to life. I enlisted Sarah Soderlund to do the logo and Linda Malman to create the aprons and we had a start! Our first filming featured Dwayne Patrick Griffith and Lori Perry. We cooked nachos and talked about imposter syndrome and it was an incredible afternoon. But as Aditi and I viewed the footage, we realized we were trying to do too much with both cooking and talking. So we pivoted and focused on unscripted discussions about our guests' passions. From that came simplicity, energy and inspiration. What started as a cereal renaissance back in 2019 has transformed into a protein portfolio with 5 incredible product lines (and multiple sub-lines) across several different aisles. As Magic Spoon expanded with each new product line, more variables were introduced into the design system, resulting in a fragmented portfolio that lost some of its magic. So we reimagined the portfolio architecture from the ground up, developed a cohesive color system that creates huge impact at shelf, an easy to navigate communication system, brought appetite appeal to the forefront, all while keeping the iconic assets and essence that make Magic Spoon such a beloved brand. The new designs are rolling out now at retailers like Target, and we couldn't be more exited to share the full case study in a months time. As with all things, it takes a village and we had a team of amazing creative partners to thank, in addition to an awesome and trusting client team. I want to thank Josh Wand and Sean Kelly for their incredible support and for including me in this year’s event. Years ago, when WILDE was just getting started, The Family Fund & Founder Community believed in us and invested in our journey. Since then, Josh and Sean have continued to advise us, support us, and serve as true strategic partners every step of the way. I am deeply grateful for their friendship and belief in what we are building. Unfortunately, I recently tore my Achilles while playing basketball, so I will not be able to attend Founderland this year. I am truly bummed to miss such a special event and the chance to spend time with this amazing community. Building a company requires everything you have, which is why every entrepreneur needs an outlet. We all need something that helps us clear our minds and step away from the daily grind. For me, that outlet has always been basketball. This time, it was an unlucky day on the court. But that is also part of the journey. We traded little Lyons, CO, for little Sebastopol, CA, and a mountaintop for an orchard just outside Occidental and not far from the Pacific. We'd been discussing moving closer to LA, but an opportunity emerged, and it all happened in a blur. It's hard to explain, but we felt like our time in Colorado had simply come to a close. We were ready for a change, so we sat down as a family and asked ourselves what we actually wanted. Our daughter wanted college in California. Our son wanted a change. Erin and I wanted to garden year-round, enjoy sunshine without scorching summers, and be closer to family, friends, and the ocean. So we ended up in a place where people still park nose-in and conversations frequently revolve around plants, soil, and gardening. We're back in the land of morning fog, vineyards galore, beautifully defunct California barns, the Russian River (with boats selling snow cones and smash burgers), and farm stands, flower stands, egg stands, plant stands, and bamboo forests. We're currently growing apples, pears, Asian pears, blackberries, persimmons, asparagus, walnuts, mulberries, grapes, and Chinese garlic. Next up are vegetables, salad greens, and tea in the greenhouse. Not to mention a giant sequoia, a hundred-foot-tall liquidambar, aspens, live oaks, Japanese maples, and several weeping willows. What we didn't appreciate was that we'd also bought a much bigger fixer-upper than imagined. The property promptly swallowed my summer. Somewhere between repairing buildings, sorting out water and septic systems, and preparing for the winter rains, I disappeared entirely from CPG and consulting. We're close to San Francisco, Berkeley, the Pacific, wine country, live music, theater, and the arts. We're surrounded by an extraordinary food, beverage, and agricultural community, including companies like Yerba Madre and Traditional Medicinals. After a summer spent getting our new home ready for the rains, I'm turning my attention back to CPG. I'm actively looking for my next opportunity, whether that's helping a founder scale a promising business, stepping into an operating role, or working with a company navigating growth or transition. I'm equally happy jumping in to help with manufacturing, formulation, or, as I recently told a friend, packing bags of product and discussing factory flow. After 14 years in CPG, I'd love to put that experience to work with another ambitious team. I'm open to consulting, fractional leadership, helping with production, or even a part time opportunity in Northern California or the Bay Area. If you're building something interesting or know someone who could use an experienced CPG operator, I'd genuinely appreciate an introduction. And if you're in Sonoma County or the Bay Area, let's get coffee. I've spent an unreasonable amount of time talking to contractors this summer and could use a change of subject. It's good to be back!

Is 2026 the year of tallow maxxing? I sure hope not. But that's the prediction of Prima Ancestral Protein Bars, one of many new snack brands positioning beef tallow as a superfood. It's not -- and that's my biggest beef (pun intended) with this trend. RFK, Jr. may have helped ignite the anti-seed oil narrative, but now snack companies are jumping on the beef tallow bandwagon in a big way. Prima calls beef tallow "nature's most nutrient-dense ingredient" and leans into grandma-core nostalgia, positioning the bars as ancestral real food eaten before industrialism corrupted out food supply. No refined sugar is a big claim, yet the bars contain 10g of added sugar from raw honey. The company declares "join the fight against fake food" and "get back to real food," but let's hope these highly processed bars are not what consumers are going to embrace as real food. Similarly, Vaca beef tallow-fried tortilla chips boasts about being real food: "Our chips aren't just snacks, they're a return to real food without the junk seed oils, weird chemicals or fake flavors that flood the shelf." Claims about beef tallow are incredibly exaggerated, such as being high in vitamins A, D, E and K. Beef tallow is high in saturated fat, but contains only negligible amounts of these fat-soluble vitamins. And all of these companies get the story wrong about seed oils. This is a trend I don't like to see gain traction. Chips fried in beef tallow are still chips. Swapping seed oils for beef tallow doesn't transform a processed snack into "real food."

I have written a lot lately about protein and where the category is heading. This deal is another data point worth paying attention to. Second Nature Brands, the PE-backed snacking platform behind Brownie Brittle, Sahale Snacks and Voortman, just agreed to acquire Tillamook Country Smoker. Tillamook generates more than $175 million in annual sales and makes clean-label zero-sugar jerky, beef sticks and sausages. This is Second Nature's first move into protein snacks. The category numbers explain why. Dried meat snack sales excluding jerky rose 10.7% to $3.3 billion in 2024. PepsiCo entered this year with Good Warrior. Chomps, Jack Link's Protein Snacks and Archer Meat Snacks are all scaling. The category has gone from a niche better-for-you play to one of the most competitive aisles in the store in a very short window. For Second Nature, Tillamook gives them a platform in a category with real consumer tailwinds. For CapVest, the PE firm backing Second Nature, this is the roll-up playbook working exactly as designed. Buy castoffs and undermanaged brands, add distribution muscle and retail relationships, and let the category growth do some of the work. As consumer expectations for transparency and reduced #addedsugar continue to rise, clean label sugar reduction isn’t a trend, it’s the bottom line for product relevancy and long-term growth. That shift rewards companies who invest in ingredient science and formulation excellence rather than artificial shortcuts. This plays right into why teams like ours at Icon Foods are laser-focused on natural #sugaralternatives and formulations that hit sensory expectations and nutrition targets without compromise. Props to the industry for leaning into better ingredients and smarter sweetening, the future of functional eats and drinks is clean, not loaded.
