In my view, even if an uneducated person receives training, they can only learn a limited set of skills that usually follow a fixed pattern. Such a person may perform the task well, but bringing innovation or creativity into the work becomes difficult. The reason is that education and awareness shape a person’s mindset in a way that enables them to approach the same task from multiple perspectives. This ability is what ultimately leads to creativity. When it comes to becoming a chef, practical skills alone are not enough. A strong foundation of knowledge is equally important. Understanding food science, nutrition, the chemical nature of ingredients, and the technical aspects of modern kitchens requires education. Perhaps 20 or 30 years ago, it was possible for someone to progress in the culinary field based purely on experience without formal education. However, the world has changed. Today’s era is defined by modern technology, research, and intense competition. In this environment, education and awareness play a crucial role. They transform a chef from merely a skilled worker into a creator who can introduce new flavors, new concepts, and innovative techniques.

From jerk chicken at festivals to ackee and saltfish on Sundays, meals were a celebration. But as I delved into culinary operations, I realized the bigger picture – sustainability wasn't just a buzzword, it was a necessity. For me, it started with sourcing local ingredients. The freshness, the taste, and the support for our farmers were game-changers. I began incorporating more local produce into my cooking, experimenting with heirloom varieties and traditional recipes. Call me a convert, but there's nothing like the flavor of freshly picked callaloo or scotch bonnet peppers. Reducing food waste became a passion project. I'd repurpose leftovers, use every part of the plant, and compost food scraps. It wasn't just about reducing waste; it was about respecting the food and the people who grew it. Plus, it's amazing how creative you can get with leftovers – jerk chicken bones make great soup, and stale bread becomes delicious bread pudding. Now, I'm hooked on sustainable food practices. It's about preserving Jamaica's culinary heritage, supporting our local economy, and doing our part for the planet. Whether it's reducing single-use plastics, sourcing sustainable seafood, or promoting local farmers' markets, every small action counts.
