Chef notes

There's nothing wrong with shortcuts as long as they aren't compromising the flavor and healthiness of your dishes. One I fully endorse is sheet-pan meals. Tongue-in-cheek, I call them "cheat sheets." It's a quick, easy method, especially useful for family dinners on busy weeknights. Add a starch like mashed or roasted potatoes, plain pasta, quinoa or rice, et voilà — you've got a fully balanced one-dish meal.

Technique tip: Be sure to preheat your sheet pan; position the ingredients on it in a single layer, avoiding overcrowding; and, for ease of cleanup, line it with aluminum foil.
