A handful of producers do make varietal Himbertscha wines. These are typically straw-colored wines, with aromas of spring herbs, wild garlic, dandelion, hazelnuts and lemons. On the palate, the flavors are reminiscent to moss, lemon and Brazil nuts and have a high level of acidity. The variety was brought back from the brink of extinction by the Chanton Winery in Visp.

Himbertscha is best grown using the pergola vine-training system.
