The Red Soul of Veneto: Discover Tart Cherry Elegance, Appassimento Decadence, and the Masterpiece Wines of Valpolicella.
Veneto’s Indigenous Red Anchor
Hailing from the sun-drenched terraced hills surrounding Verona in Northeast Italy, Corvina (often known formally as Corvina Veronese) is the essential red grape variety behind the world-renowned wines of Valpolicella and Bardolino. Renowned for its vibrant ruby color, high natural acidity, low tannin structure, and signature aromatics of sour red cherry and green almond, Corvina serves as the structural backbone for everything from light, everyday table wines to rich, age-worthy cellar icons.
While Corvina produces wonderfully fresh, bright wines in its youth, its true superpower lies in its thick, thick-skinned berries, which make it perfectly suited for the region’s traditional Appassimento technique—a semi-drying process that concentrates sugars, glycerine, and complex flavors to create legendary wines like Amarone and Recioto della Valpolicella.
Viticultural Characteristics & The Appassimento Technique
Thick-Skinned & Late-Ripening: Corvina ripens late in the season, retaining high levels of tartaric acidity. Its unusually thick skins protect the grapes from rot and mildew during fall harvests and extended drying periods.
The Appassimento Process: Post-harvest, hand-selected Corvina clusters are laid out on bamboo mats (fruttai) in well-ventilated drying rooms for 3 to 4 months. As the grapes lose 30–40% of their water weight, their flavors concentrate, transforming bright fresh cherry profiles into decadent layers of dried fig, cocoa, espresso, and warm baking spices.
Corvinone & Traditional Blending Partners: Corvina is rarely bottled alone, traditionally blended with Rondinella (which adds floral aromatics and color) and Molinara (providing bright acidity). It is also frequently complemented by Corvinone, a distinct genetic variety prized for its large berries and deep spicy complexity.
Appellations & Regional Winemaking Styles
Valpolicella DOC & Valpolicella Superiore: Light to medium-bodied red wines packed with tart red cherry, cranberry, white pepper, and wild herbs. Designed for effortless everyday drinking.
Valpolicella Ripasso DOC: "Passed over" active Amarone grape skins, re-fermenting young Valpolicella wine to infuse added body, velvet texture, alcohol, and dried-fruit richness.
Amarone della Valpolicella DOCG: The pinnacle expression. A dry, full-bodied powerhouse crafted entirely from dried grapes, offering rich notes of dark plum, black cherry, leather, bittersweet dark chocolate, and raisin with seamless integration.
Recioto della Valpolicella DOCG: The ancient, sweet dessert wine ancestor of Amarone, where fermentation is halted early to retain natural grape sugars.
Bardolino DOC: Located along the eastern shores of Lake Garda, producing pale, ultra-fresh red wines and Chiaretto (rosé) with vibrant citrus and wild berry crunch.
Benchmark Estates & Legendary Producers
Giuseppe Quintarelli: The late "Grandfather of Veneto Wine," legendary for hand-crafted, long-aged Valpolicella and Amarone of extraordinary finesse and depth.
Masi Agricola: The pioneering historic estate that modernized the Ripasso technique and champions single-cru Amarone expressions.
Dal Forno Romano: The modern titan of Valpolicella, producing hyper-concentrated, intensely dark, and powerful Corvina-based masterpieces through ultra-dense planting and strict selection.
Allegrini: Masters of modern Valpolicella, renowned for single-vineyard bottlings like La Grola and Palazzo della Torre that showcase Corvina's elegance without heavy dried-fruit influence.
Epicurean Food Pairings
Fresh Styles (Valpolicella/Bardolino): Wood-fired Margherita pizza, pasta with ragù Bolognese, grilled sausage, prosciutto di Parma, and roasted chicken.
Rich Styles (Ripasso): Braised beef short ribs, Osso Buco, mushroom risotto, roasted duck breast, and wild boar ragù.
Powerful Styles (Amarone): Slow-simmered venison, roasted lamb shanks, gorgonzola piccante, aged Parmigiano-Reggiano, and dark chocolate desserts.
