How to Make the Jennifer Aniston Bulgur Salad (Step-by-Step)

  1. Cook bulgur according to the package. Cool to room temperature.
  2. Wash and chop veggies: cucumbers, cherry tomatoes, red onion, kale and fresh herbs.
  3. Drain and rinse chickpeas from can solution until water runs clear.
  4. Whisk together all dressing ingredients in a small bowl and set aside.
  5. Add all salad ingredients to a large mixing bowl and toss together.
  6. Drizzle dressing over salad, toss well, and let sit for at least 10 minutes for flavors to come together.

Ingredients

Salad

  • 1 cup bulgur, cooked
  • 15 oz can of chickpeas, drained
  • 1/2 cup cucumbers, persian
  • 1/2 cup tomatoes, cherry
  • 1/4 cup red onion
  • 1/2 cup parsley
  • 1/4 cup mint leaves
  • 2 cups kale , chopped
  • 1/3 cup feta cheese

Salad dressing

  • 1/4 cup extra virgin olive oil
  • 1 juice lemon
  • 1 tsp salt
  • 1 pinch black pepper

Equipment

Instructions
 

  • Cook the bulgur according to the package
  • Wash and chop up all your veggies, kale, herbs
  • Chop up the feta cheese or crumble it in between your hands
  • Open up canned chickpeas and drain out the salt solution
  • Mix together the dressing ingredients in a small bowl
  • Assemble the salad by mixing together all the ingredients
