Chemist Tips on Gluten-Free Banana Bread

Oat flour is my favorite baking flour for most things especially breads and cakes. Most oat flour is gluten-free, just make sure it’s organic and not mixed with other types of flours. You can also use an all-purpose gluten-free baking mix flour or even almond flour. Be sure to check out our gluten-free baking tips for more details on this.

There is no need for any dairy product in this because the bananas act as the binder and thickener, so you don’t even need oil! You can also check out more dairy-free baking tips here.

If you have an egg allergy, feel free to replace the eggs with an option from our egg-free substitution list. It does great with many other egg-free items!

Sweetener Options

Many readers ask about Paleo options and this is a great one. I typically use honey for sweetener, but to make this a traditional Paleo option,  you can use maple syrup instead.

I will point out this banana bread isn’t overly sweet which is what we prefer. If you like a more sweet banana bread, add in some coconut sugar. You can add an additional 1-2 tablespoons of coconut sugar to enhance the sweetness.

For more information on coconut sugar and why I use it, read this post all about sugar!

Other Options

I always use enjoylife chocolate chips because they are dairy-free. You can use any chocolate chip you want in this.

Other fun additions are nuts, dried fruit, coconut, or anything else you love!

Storage

We never have this on hand for more than a few days, but it keeps on the counter in an air-tight container for 3-4 days. If it starts drying out, we always heat it up in the microwave for a few seconds. It is really delicious warm and cold!

  2. Happy Monday. This looks yummy! Is this bread a dense bread – there doesn’t seem to be any leavening agents. In the pictures, it isn’t very “high”. But taste is what counts.

    1. It has baking powder in it, so it does rise pretty well. It doesn’t fill much of the pan,but will rise to about this thickness 🙂 So delicious!!
