Even Michelin stars & Beard winners can’t survive. Let’s be clear: It’s not a Miami issue. It’s not a talent issue. The market evolved. More competition. More openings. More out-of-town groups with better financing and sharper execution. Some operators got comfortable. Now they’re getting outperformed. Here’s what’s breaking most restaurants — and how to fix it: NO RESERVES If you’re opening in Q1 or Q2, you don’t need 3 months of reserves — you need 6 months. Season doesn’t truly return until Thanksgiving. If you can’t float until then, good luck! SPACES TOO SMALL You will rarely make money with fewer than 65 seats. Don’t sign 2500 sq ft unless: You’re in a hotel with no rent or you’re charging $$$$$ per guest for omakase, and you’re one of the few chefs in the world who can pull it off (None of them are in Miami yet, respectfully) Even at 65 seats, you must be in a high-traffic area, no reservations, and able to turn tables multiple times a night. One turn + 1/2, high-production, high caliber restaurants don’t make it. Look online in Miami and see how many spots at 2500 - 3000 square feet are available, it’s not a coincidence. OWNER SALARIES TOO EARLY If you’re drawing a salary while paying a GM and chef — you’re double-dipping. Taking distributions before investors or the principal are paid back? That’s not sustainable. NO TEAM OWNERSHIP If your team doesn’t act like owners, it’s because you haven’t built that culture. Train them. Incentivize them. Share upside. Build buy-in. NO MARKETING INFRASTRUCTURE Instagram isn’t a strategy. You need PR (local + national), concierge relationships, events, email, content & even TV. Smart chefs leverage all of it. WEAK BEVERAGE PROGRAMS Too cool for school independents often avoid national brands — but that’s where the best support comes from. You’re not doing $20M — that’s why you need them. VENDORS AREN’T BANKS Net-30/Net-60 is not capital. If your suppliers are floating your business, you’re not operating — you’re living on a prayer. NO PERCEIVED VALUE Two different places charge $22 for a burger. One includes fries, great service and a view. The other charges for fries. Only one gets the second visit. NO HOSPITALITY I ate at one spot, as a neighbor 6 days in a row. Not once did the host say “thank you” or “welcome back.” Then I dined with a chef client — suddenly I had 10 people surrounding us. The chef owner of the restaurant was there that day and knew my lunch companion. That’s the story I tell, so do your guests. What works in Miami today with a realistic lease; • 6 months of reserves • 100+ seats • Integrated marketing • Vendor partnerships • Team equity mindset • True hospitality • Storytelling • And financial plan that survives summer into Q4 PS If no one says thank you— they won’t come back.
