The Wines of San Salvatore 1988

Falanghina, a white wine from Campania, is my favorite wine to enjoy with seafood. One I particularly enjoy is the Falanghina from Azienda Agricola San Salvatore 1988.  Recently I was invited  by Serena Valeriani from Miriade & Partners to a lunch featuring the wines of San Salvatore and, since I was unfamiliar with the rest of their wines, I was only too happy to attend in order to learn more. Thr lunch was held at Audace Ristorante in NYC.

The speakers were Giuseppe Pagano, Founder and CEO, and Elena Spadoni Waxman, the Brand Ambassador, who also acted as a translator for Mr. Pagano.

I was very impressed by Mr. Pagano who was not only very enthusiastic about his winery but also about the history and geography of the area were his winery is located. He explained the geography and terroir and spoke about the history going back to the ancient Greeks.

Azienda Agricola San Salvatore is located in the middle of the National Park of Cilento, near Paestum in the Campania region of southern Italy. In 2006 Giuseppe Pagano, a successful entrepreneur and hotelier in the Paestum region of Campania, created San Salvatore 1988.  The winery is named for Giuseppe’s firstborn son, Salvatore, who was born in 1988.

San Salvatore has quickly become one of Italy’s most environmentally-conscious azienda agricolas. There are 149 hectares devoted to organically farmed agriculture, including vineyards, olive groves, and crops that support their 550-head of water buffalo.

They make mozzarella, yogurt and gelato from the buffalo milk. Mr Pagano  said there was also a restaurant on the property.

The Wines

Campania Falangina IGP 2023 made from 100% single variety Falanghina from the Cannito vineyard planted in 2008 at 150/210 meters. The exposure is south, southwest and the soil is of medium texture and deep. The training system is espalier with Guyot pruning.  The average age of the vines is 19 years. After manual harvesting the finest bunches, the grapes are softly pressed and subjected to cold maceration for 6 hours at 4C. Fermentation is in stainless steel tanks at a low temperature. Before bottling, the wine ages on the lees for 6 months in stainless steel tanks. The wine has hints of citrus fruit, green apple, a touch of pineapple and a note of apricot.

Paestum Fiano IGP 2021 Pian Di Stio made from 100% Fiano. These grapes come from a special cru in the Stio vineyard chosen annually. The vines are at 550/650 meters and the exposure is south. Soil composition is clay and limestone. There is 6 hours of cryomaceration followed by a soft pressing of the grapes and fermentation in stainless steel. Aging is in French oak barriques and in bottle for 6 months before release. This is a complex wine with hints of peach, green apple, vanilla, almonds a hint of fig and a touch of honey.

Campania Rosato IGP 2024 Vetere made from 100% Aglianico from an ancient terroir, in a vineyard in the shadow of the temples of Paestum, in the heart of the Cilento National Park. This wine takes its name from Magliano Vetere, a small town in the Cilento National Park near San Salvatore’s Cannito vineyards where the organic grapes used to make this wine are grown. The vines are at 150/210 meters and were planted in 2008. The exposure is south/southwest and the soil is clay and limestone. There is a cold maceration for 6 hours, followed by a soft pressing of the grapes with brief contact with the skins to extract the smallest amount of color and elegant refined aromas. Elena described it as ,“A rosé with a Provençal color yet one that speaks of the entire Cilento Region.”  She also said Mr. Pagano went to Provence to see how the rosè was made there.  The wine has hints of red fruit, strawberries, rasperries with a touch of violets and a note of citrus fruit.

Paestum Aglianico  IGP 2016 Omaggio a Gillodorfles made from 100% Aglianico. Mr Pagano said this wine is named for Gillo Dorfles, an Italian genius of the 20th Century. He was in love with Paestum and with the majesty of its history. He spent his summers here enjoying art, the sea, the temples as well as the vineyards of San Salvatore.  He was a professor of aesthetics at the University of Milan and Trieste and an artist. Above all, he was in love with Paestum and its majesty. Mr. Pagano decided to dedicate sixteen vintages of this wine to him.

The vineyard was planted in 2005 at 150/210 meters with a south/southwest exposure. The soil is clay and limestone. Fermentation in temperature-controlled stainless steel tanks for 30 days. Aging: 24 months in new French oak barrels, 1/3 Allier, 1/3 Nevers and 1/3 Troncais. The wine has hints of cherry, blueberry, blackcurrant, blackberry, violet a hint of juniper and a touch of chocolate.

Pastrami Aglianico IGP 2017  Omaggio a Gillodorfles this is a very intense wine with hints of red fruit, cherry, blueberry, raspberry with a touch of spice and balsamic notes.

Mr. Pagano said that the 2016 was a exceptional year for Aglianico while 2017 was very warm and produced wines which had jammy fruit and will be ready to drink sooner. They were very different wines.

Paestum Aglianico  IGP Jungano 2021 made from 100% Aglianico. This wine is named for the town of Giungano where the San Salvatore winery is located. The vineyards are at 150/210 meters and were planted in 2008. The exposure is south/southeast and the soil is clay and limestone. Grapes are vinified at a controlled temperature. The wine is matured in stainless steel and aged for a year in stainless steel and wood. The wine has hints of cherry, blackberries, violets and spice.

It was my pleasure to meet Mr. Pagano and taste a range of his wines.  I am happy to report that I enjoyed them as much as his Falanghina.

The Wine Media Guild Sicily Tasting: The Red Wines

At the Wine Media Guild’s recent tasting and lunch at Felidia Restaurant, we tasted 12 red wines from Sicily ranging in price from $12.99 to $159.99 for the Santa.Ne from Palari, the only wine in the group not made from native grapes.

Frappato 2013 DOC Paterno di Vittoria, 100% Frappato Golden Ram Imports NYC, David Rosengarten Selections, $18. Maceration is for four days with skin contact and temperature controlled fermentation. The wine spends one month in steel and one month in bottle before release. This is a well-balanced, aromatic wine with hints of cherry and pomegranate.IMG_0198

Frappato 2014 Planeta, 100% Frappato Palm Bay $21.99 De-stemming followed by 12 days maceration, after racking, malolactic in stainless steel. The wine should be drunk 3 years from the vintage. This is light bodied aromatic wine with hints of spice and red fruit.IMG_0199

Cerasuolo di Vittoria 2014 DOCG Planeta, Nero d’ Avola 60% Frappato 40% Palm Bay $ 23.99. The grapes are de-stemmed and crushed, extraction on the skins and 8 days of maceration. After racking, malolactic fermentation takes place in steel tanks. This is a fruity wine with hints of strawberries, cherries and figs with a long finish.IMG_0201

Cerasuolo di Vittoria 2012 DOCG Paterno di Vittoria 60% Nero d’Avola and 40% Frappato, Golden Ram Imports NYC $25. Vinified in stainless steel for 15 days. The wine is aged for 6 months is stainless steel, 6 months in barriques and 6 months in bottle before release. This is a wine with good red berry flavors and aromas with a long finish and nice aftertaste.IMG_0206

Nero D’Avola 2014 Cusumano 100% Nero d’Avola Tony di Dio Selections $12.99. Production zone San Giacomo, Butera. The vines are 14 years old and the exposure south, southeast. Training system is espalier and there are 5,000 plants per hectare. This is a fruity easy drinking wine and a great value.IMG_0207

Nero d’Avola Riserva Sicilia “Don Antonio” 2011 Morgante 100% Nero d’Avola Winebow $42. The vines grow in white calcareous soils with small amounts of clay at 500/550 meters. Harvest takes place at the end of September. Vinification is in stainless steel at a controlled temperature with 20 days skin contact. Malolacatic fermentation is in stainless steel. The wine is aged for 12 months in new French Allier and Troncais 225 liter barriques, followed by 12 months in bottle before release. The wine has hints of cherry, raspberry and violets with a touch of leather and liquorice.IMG_0208

 Rosso del Conte Contea di Sclafani DOC 2010 Tasca d’ Almerita Nero d’Avola 63% and 37% other red grapes Winebow $70 Production area Palermo, Sicily. The soil is fine clay slightly calcareous and the vineyard was planted in 2002. It is at 650 meters with a south-west exposure. The training system is bush and espalier, with short spur pruning. There are 4,000 vines per hectare and the harvest is in the beginning of October. Traditional red wine fermentation in stainless steel and maceration for 20 days. The wine is aged for 18 months in new French oak, Allier and Troncais 225 liter barriques and ten 6 months in bottle before release. The wine has hints of cherries and herbs with a touch of vanilla and tobacco.IMG_0209

Etna Rosso “Martinella” 2010 DOP Vivera (the winery is 100% certified organic) 80% Nerello Mascalese and 20% Nerello Cappuccio Montcalm $39.99 Located in Linguaglossa, Contrada Matinell on the northern-eastern slope of Mont Etna. The vineyard was planted in 2003 at 600 meters, volcanic soil with abundant rounded stones. Vertical trellis, spur pruned cordon and there are 5,500 plants per hectare. The grapes are carefully selected and hand picked the first week of October. Cold maceration is followed by fermentation at controlled temperatures for 10 days. The wine is racked and aged in 225 French barriques for about one year. It is refined in bottle for another 12 months before release. The wine hints of sweet red fruit and a note of bitter chocolate.IMG_0210

  Etna Rosso “Rovittello” 2013 DOC 100% Nerello Mascalese Benanti Tradizione Imports $20 The countryside of Rovittello, on the north side of Mt. Etna in the commune of Castiglione di Sicilia. It is a single vineyard grown as alberello (free standing bush) at 750 meters. The soil is sandy, volcanic and very rich in minerals. The vines are 80 years old and there are 9,000 vines per hectare. Harvest takes place the second week of October and the grapes are late ripening. Traditional vinification takes place, with long maceration of the must with the skins. After malolatic fermentation, the wine matures in small casks of 225 liters for more than one year and 8 to 10 months in the bottle before release. The wine has hints of red fruit and a touch of vanilla.IMG_0211

Rosso del Soprano (the red from the heights) 2011 Palari Cru Artisan Wines-Banfi $58.99 Made from the same grapes as the Faro below. The wine is aged in one-year barrels of Troncais and Allier oak. It is bottled unfiltered and rests for another year until release. The wine has hints of red berries and spice.IMG_0212

Faro (lighthouse) 2009 DOC Palari Cru Artisan Wines- Banfi $99.99 made from 60% Nerello Mascalese, 1% Cor’e Palumba, 2% Jacche 15% Nocera, 20% Nerello Cappuccio and 2% Acitana. The grapes are grown in vineyards located in Santo Stefano Briga (Messina), in sandy soil. After a soft pressing and fermentation with native yeasts in temperature controlled stainless steel tanks, the wine is aged in new barrels of Troncais and Allier oak for at least 12 months. The wine is bottled unfiltered and remains in bottle for 12 months before release. This is a complex wine with hints of ripe red fruit, spice, jasmine and a touch of vanilla.IMG_0213

Santa.Ne 2008 Palari Cru Artisan Wines-Banfi $159.99 Made from 100% “A Francisa.” Alessandro explained that over 150 years ago the farmers found a unusually clay-rich plot of land and decided to plant grapes from France. Over the years the vines adapted to the land and the farmers no loner remembered what was planted there. So in dialect they called it “A Francisa”–the grapes from France. It is a single vineyard in the heights of Santo Stefano Briga (Messina). Following the pressing of the grapes and fermentation with native yeasts at controlled temperature the wine rests for 24 months in barrels of Troncais oak and at least 2 years more in bottle unfiltered 2 years before release. The wine has hints of red fruit, tobacco, leather and spice with a touch of vanilla.

Dinner with Lars and Karen

Dinner at Lars and Karen’s house always begins the same way.IMG_8533

Lars takes a large silver sword from its box, holds a bottle of Cuvee Aurora Rose sparkling wine in his other hand, and with one fell swoop slices the cork and the top off the bottle.IMG_8534

We watch in amazement while they fly across the yard.

Lars Leicht is the head of the Cru Artisan division of Banfi. Here are the wines he served that night. He also did most of the cooking!IMG_8540

Cuvee Aurora Rose Alta Lange 2011 DOC 100% Pinot Noir Banfi Piemonte. The grapes are grown in the hilltop vineyards of the Alta Langa, south of Alba in Piemonte, in a mix of clay and calcareous soil. There is one hour of skin contact and cold maceration, which prepares the grapes for soft crushing. The must is clarified and fermentation is at a controlled temperature. The final cuvee consists of 90% clear wine and 10% of the previous vintage wine. The wine is aged in French oak barriques. Fermentation takes place in the bottle (Classic Method). Yeast contact is extended for at least 24 months followed by a traditional hand riddling (remuage) on pupitres and degorgement a la glace. A period of brief aging follows. The wine is pink in color, with small bubbles and hints of strawberry and apple.IMG_8543

Lars served this wine with an assortment of appetizers including sauteed eggplant with cherry tomatoes, a Neapolitan dish.IMG_8541

Pecorino “Cortalato” Colli Aprutini IGT 2014 100% Pecorino Cerulli Spinozzi. The vineyards are in the Colli Aprutini in Abruzzo. The soil is clay and sand. Fermentation is in stainless steel, prior to malolactic fermentation and it is aged on its lees fro 5 months prior to bottling. The wine has hints of citrus and peach with notes of apricot and orange and a touch of bitter almond on the lingering finish. I recommend this wine often and it is a true bargain at less than $18 a bottle. Enrico Cerulli has taken over the management Cerulli Spinozzi his ancestral property. I have met Enrico a number of times and am always impressed by his knowledge and passion for his wine. The consulting winemaker is Franco Bernabei, who I consider to be one of the best.IMG_8548

Montepulciano D’Abruzzo “Torre Migliore” 2009 Cerulli Spinozzi made from 100% Montepulciano D’Abruzzo in the Colli Teramane DOCG area. The soil consists of compact layers of shale and is rich in nutrients. Selected grapes are hand harvested in small boxes. The juice is fermented on the skins for 15/18 days in oak for at least 16 months. The wine is aged for 6 months in the bottle before release. This is a complex intense wine with hints of ripe cherries, blackberries and a touch of clove. This wine will age and is a bargain at about $18IMG_8556

With the red wines, we ate an assortment of grilled sausages and lamb chops.

Santa.Ne 2008 100% A Francisa. I asked Lars about this unusual grape and he said “As Salvatore Geraci explains it to me, a century ago they planted a French varietal in that vineyard but no longer recall what it is. The farmers simply refer to it as “the French one,” or ‘a Francisa‘ in local dialect. Some hypothesize that it could be Malbec or Petite Verdot, but in any case over the decades it has morphed into something unique to its conditions.”

The grapes are grown in soil that consists of clay (argilla) in vineyards located in Santo Briga in Messina, Sicily. The wine is aged for 14 months in new barrels of Troncais oak. The wine is then bottled and allowed to rest, unfiltered for at least two more years before release. It has hints of tobacco, leather, red berries and a touch of spice.IMG_8557

Rosso Del Soprano 2011 made from 60% Nerello, 15% Nocera, 20% Nerello Capuccio, 2% Acitana, 2% Jacche and 1% Coe’e Palumba. After a soft pressing and fermentation with native yeast in temperature controlled stainless steel, the wine ages in one-year-old barrels of Troncais and Allier oak. It is then bottled and rests, unfiltered, for about another year before release. It has hints of ripe red berries and undertones of spice with a persistent finish.IMG_8566

Faro 2009 Like the Rosso Del Soprano above, this wine is made from the same indigenous grapes but with a different selection. Salvatore Geraci the owner of Palari saved the Faro DOC from extinction by taking over the 6 hectare vineyard and producing the wine. The wine is aged in new barrels of Troncais and Allier oak for at least 12 months. The wine is then bottled and allowed to rest unfilited for an additional year before release. This is an elegant and complex wine with notes of ripe red fruit, spice and a touch of vanilla. It has a very long finish and pleasing aftertaste. Faro means lighthouse in Italian.IMG_8568

Brunello di Montalcino 1982  Villa Banfi 100% Sangiovese, select clones from estate vineyards on the southern hills of Montalcino. The grapes are grown in stony, calcareous and well-structured soil at an altitude of 720 ft. A careful grape selection is followed by vinification with skin contact for 10-12 days. The wines are released the 5th year after the harvest. Current vintages of this wine are aged a minimum of 4 years, 2 years in oak barrels of various sizes, mainly French oak barriques and partly in Slavonian oak casks.

I do not believe the 1982 was aged in barriques and I do not believe the “clone selection” was the same back then. This is an elegant and complex wine with hints of red fruit, violets, and a touch of licorice and spice. It is showing no sign of age. A delightful Brunello.IMG_8574

Malvasia Delle Lipari 2011 100% Malvasia, Florio. The wine is produced in Malfa, on the island of Salina, archipelago of the Aeolian Islands. The soil is of volcanic origin and sandy. The vineyards are planted on the coast less the 50 meters above sea level. The grapes are hand harvested then laid on reed mats to dry in the sun for about 20 days.

The raisined grapes are gently pressed and left briefly with skin contact. The must is then drained and fermented slowly at controlled temperatures and fermentation stops naturally. The wine is aged a minimum of 5 months in 25 liter fine oak barrels. The wine has hints of raisins, dried apricots and a touch of honey
