I bought this 12kg of white bread premix the other day with the intention of using it bit-by-bit (approx 1kg at a time).

When I received it and read the back, it occurred to me that this was probably produced for use in a commercial kitchen that was equipped to process/use the entire 12kg in one batch. The recipe on the back uses either 12.5kg or 25kg flour in one go.

Since this is designed to be used in one go, I'm concerned it would contain layers (or areas) of one ingredient since it's assumed it will be mixed all together in one batch.

Is it safe to assume that this is properly mixed through and I can take 1kg off the top and it would be usable?

The back does not say anything about this. Photos of front and back included below.

    No way to be sure without reaching out to the company and asking... I'd be very surprised if it weren't - makes continuous production easier. Commented Jul 29 at 21:33
  • @bob1 Will contact them and report back. Also will just try baking with some and visually inspecting to see how homogeneous it is. Although I don't know how easy it will be to tell. Commented Jul 30 at 6:58

    I agree that it's likely mixed, but fundamentally, how much that matters is pretty limited, since it's "mostly flour" and if you add water and yeast to flour you get bread. The other ingredients are small-proportion additives. Commented Jul 30 at 15:20

    I've recently started to bake all of my own bread. I've made it easier for myself by mixing my dry ingredients 12 lb (5.4K) at a time in a 5 gallon (~19L) food safe bucket. It is an oddly satisfying part of my process. If I were you I would just do that and be safe. Store it in a container large enough to satisfyingly mix it. Commented Aug 3 at 21:45
  • I would recommend moving it into a larger container so that you can stir it because of a weird physics thing... if you have a mixed container of particles and vibrate it, the larger bits will rise to the top: en.m.wikipedia.org/wiki/Granular_convection . So unless everything is ground to the same size(or maybe perfectly circular), just the process of delivering it to the store or bringing it home will throw off the mix a little bit due to the vehicle's vibrations Commented Aug 4 at 22:40
