K.C. Gulbro shared thisStill fighting- #openIllinois In our current Case, we have asked for discovery, so the Governor to provide his numbers and the science in which he is ruling. We have been stonewalled and delayed by their team. It is a tactic being used in hopes we will run out of funding, and drop our case, not based on argument, but on financials. we are hoping that the Judge will force his hand. While we wait, we have filed an appeal to the state's Supreme Court Right now, we are asking for a fair trial- free of politics. Our hopes are that we will be given one based on the law and due process. We feel our team has made strong arguments in every hearing, and are confident in a victory. In order to do so, we need the Supreme Court to make this ruling and take this case. Foxfire is not just doing this for themselves, a win will be something that will help Moms and Pops, small businesses, and so forth more than any stimulus check or pppl would. A win will also keep the Governor from doing this again, abusing our state's constitution and overreaching based on politics. Giving a voice and hope back to the people of Illinois. And what better timing than the holiday season to do so.

As always, the Purina team is amazing to work with and their facility at Gray Summit is jaw dropping. The level of research and development that goes into their feed is truly unmatched! I gave a live beef cutting demonstration focused on alternative ways to merchandise beef, followed by a sampling session of top sirloin cap grilled on a Weber Kettle. From start to finish, the crowd was engaged, asked great questions, and we had meaningful conversations about how to bring more value to the beef we raise and sell. It was an honor to share what I am passionate about and even better to see how useful and appreciated the information was received. If you're organizing an event, workshop, or producer meeting and are looking for someone to bring practical, engaging beef education to the table (see what I did there? 😉), I’d love to talk. Learning how to deal with loss, the anger of the moment, the years of deep feelings that follow, the ability to find peace while dealing your way through supporting others, has shaped who I am today, significantly. We all pay a price when Death visits, I have a brilliant friend who reminded me once that no one and nothings makes you feel anything, that you are the only controller of your feelings. It is you that services your guilt and sadness. Those that love you, surround you, support you, also pay a price as well. Friendships, relationships, marriages, kids, family, careers, can all be lost to grief. We are truly one bad day from "Falling Down". But, We will rise from the ashes, we will find our sunny days, we will learn to carry the pain, not lose to it, but carry the memories in our minds and hearts. Our life is a reminder to have the conversations, stay up late and laugh, hug longer, get angry less, build instead of tear down, plant the right ideas, hate less, learn forever, and be a better friend, family member, or leader. The most important lesson I have learned from death, is that I can survive it, and use its lessons to help others deal with it on their hardest day. "Carry on my wayward son, there will be peace when you are done, lay your weary head to rest, don't you cry no more."

For me, I imagine it's like pulling a pin on a grenade, letting it burn a few seconds in your hands, and then throwing it into action. Lay out the thought, let it simmer, and then bring in the right cross of words in a way that the audience never sees coming. The announcement that we are here for a bigger impact, than just talking, this is what powerful interactions are all about. An Intentional Verbal Assault, that lets people know, that they should be ready to hold on tight. We came to train, not have a nice conversation. "If it's not Certified, (Pause) It's not the best"

Always keep learning, even teachers go back to school! It’s so important to keep learning. Not only does it keep you up to date with current trends, it motivates you to try new things. Coming up, I had a chef that had the same four specials every weekend. Soon work became mindless repetition, with no love being put into the recipes anymore. The chef we replaced him with had new specials every weekend, and would even bring in cookbooks and new food magazines to learn new techniques. The continuous flow of creativity in his dishes is what kept our staff excited, and our dining room full.

Just to be clear, most everyone in the wine & spirits industry is hurting. Okay, besides one or two outliers maybe, but my point is: it’s not just you, your operation, your brand. These days, it just sucks for everybody. From suppliers to importers, wholesalers, retailers, bars, restaurants - the default reaction to the question “How is business?” usually is “Pretty good.” After about four seconds of digging, one finally explains that things are “complicated,” the market is “soft,” cash flow is “tight,” sales are “not strong,” etc. There is no laughing one’s way to the bank: people want to be healthier (I am one of them, and most everyone I know is on that bandwagon), customers drink less, spend less on the alcohol they purchase, it feels like everything costs a million dollars even though inflation on paper remains okay, lots of on- and off-prem are hurting (some are doing okay because of the rapport with the clientele they might have developed, or the work they put in appearing “special” to some degree while the next-door business is dead), the U.S. wholesale landscape is in shambles (on the artisanal front, inventories remain low since 2023, lots of orders are the exact reflection of what the company just sold, some wholesalers have been bought out, a good amount are looking at the suppliers they feel they need to part ways with), etc. Working 30% more to make less money is the new normal. It is hard for everyone. (Will it last? Yes, likely.)

Without a clean set of mixing tins, a bartender can't create a great cocktail--no matter how skilled they are. Because if their mixing tins have any trace of the previous cocktail, the next cocktail won't taste right. The problem is that there was never a quick and easy way for bartenders to clean their drink-making tools. That's why the Auto-Rinse changes the bartending game altogether. When bartenders can make drinks without having to take long pauses to clean their tools, they can stay in flow state. It may seem a bit woo-woo, but when you're deep in the weeds having to pump out 10-12+ cocktails per minute--and the tickets won't stop printing--every single second counts. It's not rocket science, and it may not seem like a huge leap forward. But when you're getting your ass kicked in the service bar--and now have an assistant that's cleaning your tins and tools for you--it makes all the difference in the world. And it's not just for the bartender's peace of mind. Shorter ticket times mean that servers get back to their tables faster, so they can engage and sell. Bar backs can do more important things when they're not tied to a sink cleaning mixing tins and jiggers. The entire operation becomes more profitable when drink ticket times are shorter, because the whole FOH staff now has more time to manage the guest experience. #bar #restaurant #cocktails #coffee #invention
